 Cons : covid situation to be wary of. Might only get a certain type of old person- might not get a range of answers. Conversation going too far in the wrong direction - the expected vulnerability might be unethical to include them. Practically a good idea but complex thing to organise. The residents might not fit within the age of 55ish. 
(Combat this vulnerability with perhaps younger people).
How to do this : would have to ask (how). Find an organisation that deals with

Will people have ten minutes? Could be done by gauging intrest rather than a interview - arrange for an interview at a different time (inefficient) 
Pros : random, great selection of people and experiences. The survey becomes more valid. 
Cons : people are busy. Perhaps inappropriate to ask the age of strangers. Dealing with fewer people with less interest.  Uncontrolled environment (comfort of both interviewer and interviewee at risk)

Pros : safe environment. Often there are people wanting to talk in the pub.
Cons : noisy. People might not want to be bothered whilst at the pub. Needs interviews to be set up as there are many time specific issues. Might also have a small demographic dependant on the location.
