It is killed, cleaned, skinned; the blood is collected and depressed. Fresh blood is salted so it doesn't coagulate.&nbsp;</div><div>The giblets are minced and parboiled in water-salt for 20 minutes. The goat meat is washed with lemon, salt and pepper, left to rest for 20 minutes and then fried in hot oil until medium brown. Add the parboiled and chopped offal, the garlic, the onion and the paprika; mix and fry for 5 minutes, add the blood and cook over low heat for 30 minutes, stirring constantly. It is eaten with corn arepas or a clean bun.</div>]]></description>
