Badische Leberle (sauer) mit Kartoffelstampf und grünem Salat
Ich weiß, hört sich für Berliner merkwürdig an, schmeckt aber sehr gut.und verbindet die Schwarzwälder Küche mit Berliner Kartoffelbrei!

Die Zutaten sind für zwei Personen berechnet, wenn man mehr Fleischbedarf hat, entsprechend anpassen:
300 gr Kalbsleber 
30 gr (1EL) Butterschmalz
1 Zwiebel- fein gewürfelt
1EL Mehl
200 ml Fleischbrühe /fette Brühe (es geht auch eine gute Instantbrühe)
250 ml Spätburgunder Rotwein am besten natürlisch Badischen ;-)  und den Rest zum Essen trinken
Salz, Pfeffer, Paprikapulver (edelsüss oder scharf, je nach Geschmack), Muskatnuss
Die Zubereitug; 
Leber:
Leber in ca. 1cm breite und 5cm lange Streifen schneiden,
Butterschmalz in einer Pfanne erhitzen,
gewürfelte Zwiebel im Fett glasig dünsten,
Leber zugeben und kurz anbraten,
Mehl überstreuen und braun werden lassen,
nach und nach mit Brühe und Rotwein ablöschen.
Mit Salz, Pfeffer, Paprikapulver und Muskat würzen
Ca. 15 Minuten köcheln
 
Kartoffelstampf nach deinem eigenen Rezept kochen.
Dazu passt grüner Salat oder Feldsalat.
