I think what the person means by this is that Poets are always writing about something that is never really related to the topic but is always a representation of something else truthful and interesting. they are always trying to describe the world using different symbolism or examples.

I think this means that poetry is indescribable. It might mean different things to different people.  Or if you describe poetry, it may not be entirely accurate.

To me, this quote represents the poets mind. How it feels to want to escape into another place from a negative emotion or to escape yourself, to be someone else. That many people choose rather to block them out, to stifle their creative outlet either out of fear or ignorance. I think this quote relates to how when you watch a movie -- you don't know what the ending is. So, Frost is saying that writing poetry is like an adventure. He doesn't know the ending when he begins writing it...but by the end, he realises what is going on and where he will end up with it. It's a journey.

This poem represents the mind of a poets imagination and emotions.
