They use a hydroponic growing system called - VEGGIE. The seeds are sent up to space, and they are grown using artificial grow lights. They are grown in special containers due to lack of gravity and the seeds would not know which direction to grow toward. Other food items are sent up as dehydrated foods that need to be mixed with water, but fresh foods are very important to an astronaut's diet.
