Every journey starts with a single step and for me that was when I wandered into my mother's kitchen when I was a toddler. The sights, sounds and smells from the kitchen were a constant source of fascination to me - the utensils and the sounds they made, the sizzling of food on a pan, the sounds of mixing and grinding and the transformation of onions, potatoes, garlic, ginger, other vegetables and meats and fish into a delicious dish and the aromas and spontaneous tastings.
At an early age I discovered the sweet yet pungent taste of raw onions, the umami of canned button mushrooms, the crunchy sweetness of carrots and the juicy sweet and sour of a ripe tomato.

For a greater part of my childhood I was bundled off to boarding school and the many tastes and aromas were replaced by standardized meals that were repetitive and often barely palatable. Fortunately, there were 'outings' and it was during these times that I would grab the opportunity to gorge on the delicious Tibetan/Nepali comfort food of a large bowl of Thukpa and steamed momos.
