These incorporate screencasting, images and slides. 

Camtasia: allows you to create quizzes that pop up and pause the video at any given point.  Camtasia videos can be embedded as SCORM files in a VLE so you can see who has attempted the quiz and what score was achieved etc.  You can also receive daily reports by email.
