The beaches are very crowded and the prices are high. So I think the best time is October. Then you can have good weather and avoid the crowds, and the hotels are not too expensive. because (during these months we don't have many tourists and the weather....) in this months haven't so many turists and the weather is very cool
in this months are more cheap prices in hotels, restaurants and turists activities
I recommend you don't go to the commun turist areas because is more expensive
BUT you can explore others places very beautiful like Puerto Morelos
But this time of year also have sargasso so maybe you will see the beach with it

This is our Winter season and it's the beggining (beginning) of Spring and the wheater (weather) [be careful with weather and whether as they sound the same] is very good. It's not too hot, so you don't need to drink a lot of water or put (on a lot of sunscreen) [you don't need to specify it is going on your skin- this is understood by the reader] in your skin a lot of  tanning lotion.
You must visit some archeological sites like Dzibanché or Tulum. In Tulum you can find that the beach is connected with the archeological sites. That combitation (combination) of nature and human construction is absolutely breathtaking.
It's higly (highly recommendED) recommend to visit Mahahual beach and Bacalar lagoon because the color of the water depend(s)  [this needs to be plural because "the color(singular) depends(plural) on....] on the sky. 
If you want to try local cuisine you must visit the harbor where every night lots of small stands are offering (offer) [You could write this either way. The small stands are offering... or The small stands offer...] traditional dishes and dessert.
