My Mexican Rice Recipe—Zojirushi Rice Cooker by Tom Fit

Rice cookers have successfully replaced many traditional cooking tools. Not only they automatically cook rice and keep it warm but also they are easy to maintain.

I love the fact I can cook delicious flavoured rice without fussing over the gas systems.

Over the years, I have tried many rice cockers and cooked my favourite Mexican rice. While some were good, others lacked quality.

The first thing I do is collect all the ingredients. It involves long grain rice (rinsed and drained), chicken broth/vegetable broth, tomato sauce, butter, finely chopped onions and jalapeño minced.

Some other includes cloves of garlic minced, chipotle chilli powder, ground cumin, kosher salt plus, fresh cilantro for garnish and lime wedges for serving.

Except the cilantro and lime, I put all the ingredients with rice into the cooker depending on the quantity needed and stir it well. Then, use the cook settings to get the desired results.

The cooker automatically turn offs when the rice gets completely cooked.

Now, all there is to do is open the lid, stir and let it stand 5 minutes.

That’s it. The delicious Mexican rice is ready to get served with the cilantro and lime wedges.
