In 1788, Captain Arthur Phillip lead 11 ships to Botany Bay in Australia, known as the first fleet. With them, they brought militia, convicts, and free settlers, along with other foods like dried peas, salted meats, flour and sugar, and many animals from England. The new settlers established a new colony, with businesses and farms that enabled the population to thrive. By 1800, Australia had a population of 350,000, and it continued to grow as more people migrated to the nation.

Following the end of the Vietnam War, a huge influx of migrants came to Australia. Most people fled from their homeland, seeking asylum after it was taken over by the communist government. They became known as the 'boat people' due to the overcrowded and dangerous boats used to immigrate to Australia.

European immigration has had a profound impact on Australia's food tastes. Settlers from countries like Italy, Greece, Germany, and France brought with them their unique food traditions and ingredients. This influx of European influence introduced new ingredients such as olive oil, pasta, tomatoes, herbs, and spices. Cooking techniques like baking, roasting, and sautéing were also adopted. European immigration not only expanded the range of flavours but also encouraged a greater appreciation for diverse food cultures, leading to a more vibrant and multicultural food scene in Australia.

Initially, when the First Fleet arrived in Botany Bay in 1788 the Convicts diet consisted of bread, salted meat, and rum. Furthermore, during the late 1700s and early 1800s, free settlers from England, Scotland, and Ireland arrived in Australia. They consisted of agricultural and domestic workers who bought traditional cooking methods, and recipes such as meat pies, Irish Stew, Cornish pasties, and Shepherd’s Pie.

However, although the free Settlers and Convicts bought over with them traditional cooking methods and recipes, many chose to eat fresh kangaroo, wallaby meat and native fowl or bush turkey because they preferred to consume fresh food rather than salted meat or tough mutton.

Moreover, in the early years of the colony, the cuisine had a relatively bland palate with potatoes being one of the main vegetables eaten. Sheep also became a staple food after adapting to the climate and landscape.

Vietnamese migration brought new Asian flavours such as basil, mint, lemongrass and coriander. Fish sauce also became popular, used in most meals with rice, seafood and vegetables. Traditional dishes were introduced such as Banh Mi and Pho, as Vietnamese people established restaurants in order to make money. Vietnamese people used food to stay connected to their culture and the industry quickly grew due to their skilled cooking style.
