In this video, There is cake batter put in the oven and baked as a liquid. When the cake comes out of the oven it is a new solid with a new smell or aroma.

2NaHCO3 → Na2CO3 + H2O + CO2

This is a chemical change because when the cake is baking the baking soda after being heated releases C02 that makes the cake rise. This is an endothermic reaction in which the cake batter is absorbing the heat from around it in order to create the baked cake. As the cake is baked the smell changes and it is a different and stronger scent then before.
