The coating ground yellow peas are called peameal. Also, it required preparation prior to consumption. It is found mainly in Southern Ontario. William Davies, a successful ham and bacon curer and the owner of a Toronto-based pork processing and packing company named <em>William Davies Company </em>is credited with its development. It is popular because the brining process makes it nearly impossible to overcook and it's both leaner and juicer than regular<strong> </strong>bacon.&nbsp;</div>]]></description>

         <description><![CDATA[<div><strong><em><mark>Pickled Cucumber</mark></em></strong><strong><em> </em></strong><strong>- </strong>is a cucumber that has been pickled in a brine, vinegar, or other solution and left to ferment for a period of time, by either immersing the cucumbers in an acidic solution or through souring by lacto-fermentation. Pickled cucumbers are often part of mixed pickles. Brined pickles are prepared using the traditional process of natural fermentation in a brine which makes them grow sour. The brine concentration can vary between 20 and more than 40 grams of salt per litre of water. There is no vinegar used in the brine of naturally fermented pickled cucumbers. They have been a staple in cultures around the globe, renowned for their heartiness, health benefits and delicious taste.</div>]]></description>

         <description><![CDATA[<div><strong><em><mark>Tasso Ham</mark></em></strong> - is a traditional Cajun cured meat product originating from Louisiana. Although this cured meat product contains the word ham in its name, it's actually made from pork shoulder. This meat cured in salt, and bit sugar. They're rinsed, rubbed with salt, pepper, garlic, and cayenne pepper, and hot-smoked until fully cooked. Though Tasso may be eaten on its own, it is more often used as part of a flavor base for stews or braised vegetables. It is popular in USA and used in dishes ranging from pasta to crab cakes to soup and gravy. Appropriate to its roots, tasso is most often found in recipes of Cajun origin, such as jambalaya.</div>]]></description>

         <description><![CDATA[<div><strong><em><mark>Jambon de Vendée </mark></em></strong>- is a smoked, cured and boneless ham made from pig's meat in the French region of Vendée. It is popular in the country because the pigs used to get the final product are reared in the open air where they roam freely. The ham is hand rubbed with natural sea salt, a specific blend of herbs and spices (cinnamon, pepper, thyme and bay leaves) and brandy. It is left to mature slowly, over the course of three months, wrapped in cloths and pressed between two wooden boards, when it develops its characteristic brown rind and rich, sweet, meaty flavors. This famous ham has been manufactured in the region of Granada for more than two hundred years and has been popular for its exceptional quality and characteristics.</div><div>The meat that is used for this ham comes from pigs of the <em>Landrace</em>, <em>Large White</em> and<em> Duroc–Jersey</em> breeds. The climate and environment in which this ham is produced make it different from hams produced elsewhere.&nbsp; When cut, Jamón de Trevélez is bright pink and red with evenly distributed fat that makes this ham exceptionally juicy and succulent.</div>]]></description>

The production process is a lengthy one – the meat is first cut, and then salted and hung to dry for several days before being left to cure for one to two months. Then it is taken out and dried. The cabbage is shortly blanched in boiling water, then sundried, sprinkled with plenty of salt, transferred to big earthenware jars and topped with weights that will slowly press out all moisture during fermentation. In the North of China they use napa cabbage (sometimes even plain, white cabbage), in the South of China they use the less familiar jie cai (Chinese mustard cabbage). Suan cai tastes sour, not salty as you might expect. It is popular in China as a side dish with sour taste like sauerkraut.</div>]]></description>

         <description><![CDATA[<div><strong><em><mark>Quanta </mark></em></strong>- is manufactured from lean muscles of beef which are further sliced into long strips ranging from 20 to 40 cm and are hung over the wire in the kitchen to dry for 24 to 36 hours. Prior to drying, the strips are coated with a sauce containing a mixture of salt , hot pepper or chilli, and aromatic seasoning substances. After air drying, the meat pieces may be further exposed to light wood smoke and are then fried in butterfat and dried again to some extent. At this stage, the product is ready for consumption or storage. It is popular for its uniqueness in spicy flavor and aroma.&nbsp;</div>]]></description>
