Apples come in generally two colours – the reds and the greens. But unknown to many of us, whether red or green, there are specific apples for specific purposes. The ones found at Caifan aunty’s fruit table are bred for eating fresh (called dessert apples) juicy and generally sweet, but there are those not found in Singapore cultivated specifically for cooking (called cooking apples) or for producing cider. Cooking and Cider apples are typically too tart and astringent to eat fresh, but they give the cooked stews, apple pies, and beverage a rich flavour that dessert apples cannot.

Apples are sweet, edible fruits produced by an apple tree (Malus domestica). Apples have existed and been grown for thousands of years in Asia and Europe and were brought to North America by European colonists. Apples have religious and mythological significance in many cultures, including Norse, Greek and European Christian tradition. As late as the 17th century, the word also functioned as a generic term for all fruit other than berries but including nuts—such as the 14th century Middle English word appel of paradis. There are more than 7,500 known types of apples. A typical apple serving weighs 242 grams and provides 126 calories with a moderate content of dietary fiber. Otherwise, there is generally low content of essential nutrients. So why do people say “An apple a day keeps the doctor away”?
