I come from Costa Rica and am currently living in Germany.  After working around 6 years as a Food Engineer, I came to study an MBA in the University of Leipzig, focusing on the development of Small and Medium Enterprises.  During my studies I started researching about edible insects and got passionate about it.  I did my thesis on the topic and after that created an Instagram account to promote the consumption of insects.  I am now starting a project in Costa Rica to create insect farms with the aim of processing organic waste in rural and urban regions.
