Tags: dessert, half and hour or less

I love the combination of cardamom and orange zest. This is an easy cookie that can make a great snack or a lovely breakfast to go.

Ingredients: coconut oil or butter 85 gr, brown sugar 75 gr, 1 egg, flour 45 gr, rolled oats 130 gr, cardamom powder 1tsp, zest of an orange, baking powder 1/2 tsp, pinch of salt

Instructions: 1. Beat the sugar and coconut oil. 2. Add cardamom powder, egg, and the orange zest. 3. Mix flour, salt and baking powder in a separate bowl and add them in along with the oats and sunflower seeds and mix well. 4. Cover a baking sheet with parchment paper. Take 1Tbsp of the cookie dough at a time and place them on the tray. With wet hands, shape them into small disks. 5. Bake in a 180C preheated oven for about 10 minutes. Cookies should be golden on the sides and soft in the center. Allow them to cool for 2-3 mins on the baking sheet before transferring them to a cooling rack. Enjoy! :)
