WHY:
It's also a great quote to reflect with language learners the importance of trying to communicate with others in their own language as it will immediately generate a connection between the two. 
In multicultural classes this is also valid for teachers and classmates. When the teacher greets, thanks or says a short phrase in the foreign student's language, that student will feel appreciated and part of the group. The result will be that he will feel happy to go to class and he will also feel included and therefore more inclined to learn.
In a multicultural class, I'd ask each foreign student to teach the rest of the class a phrase in his own language. As a teacher I'd try and learn a phrase too!
