Sublimation bezeichnet das ungewöhnliche Verhalten eines Feststoffs, direkt beim Erwärmen in den Gaszustand überzugehen, ohne zuvor zu schmelzen und flüssig zu werden. Das gasförmige Koffein kondensiert dann an einer kühlen Oberfläche wieder zu einem Feststoff, ähnlich der Kondensation von Wasserdampf an kalten Fensterscheiben.

Durch diesen Prozess kann Koffein aus Kaffee- oder Teepulver isoliert werden, da es der einzige Bestandteil des Pulvers ist, der sublimieren kann.

Zunächst muss die Bohne natürlich noch verkohlen, was unter aufleuchten einer gelben Verbrennungsflamme geschieht. Ist dies geschehen, sieht man nur die Flamme. Auch durch ein Kobaltglas ist diese Flamme deutlich zu sehen.
