One of  my favorite is Alu-tarkari or  potato curry. To make this dish you need to have 10 to 12 medium sized potatoes, 2 tablespoons of mustard oil, 1/4 cup of turmeric, 2 optional green chilies, 1 clove of garlic, 1 tablespoon of  finely chopped ginger, half of cup of yogurt, and salt for taste. You can add green coriander leaves of garnish.
