For Simon and his friend Arthur, the Nazi concentration camp prisoner, the sunflower means nothing, no life to celebrate bringing no light to the darkness and no reason for butterflies to 'dance upon' his tomb.  The sunflower, too, will die and rot.
I think the sunflower, on the grave of German soldiers, represents beauty in the midst of darkness.  That there can be forgiveness of even the most terrible people.
