My college teacher made us turn in a quarterly notebook as a grade. That notebook had my assignments for the Chapters. She graded them during our tests and added the homework grade to our test grade. If you did all of the homework, you could pass the class. Even if you did poorly on the tests. My suggestion would be to have students work on their problems on paper and then turn it in to you or submit it online. Most teachers that teach mathematics use papers and I think it's a good method.

I have taken many online courses that involve work to be turned in alongside an assignment, but it is always a lot of work to have to email things constantly. I think the best thing would be to consolidate the week/month/9-week period into one and have them turn in all the notes at once.
