As with all recipes, each family had its own variant or its own way of preparing it, therefore there were those who kneaded using not water but white wine, those who added the boiled potato, those of extra virgin olive oil, those of the sauce. For the filling keeping the base of sponsali firm, which were generally not braised as today, but fried in extra virgin olive oil, there were those who put anchovies or mackerels in oil or tuna, those who added strong ricotta and some tomatoes .
