Salmonella is a bacteria that can cause salmonellosis, an infection that affects the intestinal tract. Some salmonella infections can even cause typhoid fever. Humans are more frequently infected through contaminated water or food. Symptoms of salmonella usually appear 8-72 hours after exposure and can include: fever, headache, abdominal pains, blood in stool, diarrhea, nausea, and vomiting. Ways to prevent salmonella is to wash hands frequently, keep prep areas clean, avoid cross contamination, cook raw meat thoroughly, rinse fruits and vegetables, and discard contaminated foods. Most people recover from this infection within a few days. Because salmonella infection can cause dehydration, treatment focuses on replacing lost fluids and electrolytes that balance the amount of water in the body. Antidiarrheals and antibiotics may also be prescribed for more severe cases. Anyone can get a salmonella infection but some groups are more likely to get severe cases: children, pregnant women, older adults, and people with weakened immune systems. People that eat raw or undercooked eggs, poultry, or beef, unwashed fruits and vegetables, handles animals or pets, and individuals that take medications that reduce stomach acid has a greater chance of getting this infection.
