It states "energy cannot be created or destroyed." this means that energy can not be created out of nowhere nor can it be destroyed from existence. It can move through different sources and be transformed into a new piece of energy.

Energy can most definitely change how do you think solar panels work? Solar panels use the light being produced from the sun as energy. The light energy is then converted into electrical energy which can be used as other pieces of energy. A light bulb is another example, when you flip the switch electrical energy is running through the light bulb which is converted into light. Other types of light bulbs have a different way of producing light.

Energy can be transferred into more than one piece of energy.

a piece of technology called "A hydroelectric generator" use mechanical energy to push its turbine which powers the generator. The generator then converts the mechanical energy into electrical energy which can be used to convert into other pieces of energy. So yes energy can be transferred into multiple types of energy.
