When you use MentiMeter it's useful to download your PowerPoint slides into MentiMeter and then present those online not just your PowerPoint slides. That way students can see what other contributions are being made in 'real time' and this can encourage contributions from students who may be feeling a little reticent to add their thoughts. You can then dowload a PDF of the slides and contributions which is a good alternative to only providing the full recording.

In a large cohort, there can be a larger proportion of students who might miss information, especially with increased absenteeism. Keep your Moodle site up to date with all the relevant information, use discussion boards (like Padlet!) to enable students to ask questions and then all students can then see the answers (to save the inevitable email traffic). Office hours, online or on campus, provide students with an opportunity for one-to-one contact with staff, but keeps things manageable - put the hours up on Moodle.

Assessing group work

Always a tricky subject, but in a large class, you might design assessments based on group work. Instead of each member of the group simply being assigned the same mark for the final submission, you can use the Peer Work tool - which is embedded in Moodle. Students can rate the performance and contribution of their peer group (and optionally themselves), and this mark is combined with the tutor mark to create individual marks for each student. You can find more info. here: https://blogs.napier.ac.uk/learningtechnologyhub/peer-work/
