Litti Chokha is a culinary gem hailing from the heartland of Bihar. It is made of wheat and stuffed with sattu, mixed with herbs and spices, and shaped into a ball. Roasted in a wood-fired clay oven, Litti Chokha offers a smoky and tangy taste experience. The outer shell of the Litti, which is made from a dough of wheat flour, becomes wonderfully crispy and golden when baked or roasted. As you take a bite, the crust breaks to reveal the flavourful and aromatic filling inside. Served with a side of mashed roasted eggplant, tomatoes, onions, and garlic, this dish is a culinary masterpiece that embodies the rich flavours of Bihar's cuisine. The smoky flavours from the roasted eggplant and the tanginess of the tomatoes create a harmonious blend of flavours that is both satisfying and tantalising. Litti Chokha was developed as a practical and nutritious solution. The dish offered a perfect balance of flavours and ingredients that could be easily prepared and consumed. Farmers and labourers would make Litti Chokha by using locally available ingredients, making it an affordable and sustainable option for their everyday meals.
Panya
4B

Very few dishes of Northeastern India are known, one such very popular delicacy is the Eromba/Iromba. It is a very popular dish from the Meitei community of Manipur and prepared with dried fermented fish and locally available veggies.

The prime ingredient of this dish is the fermented dried fish known as Ngari in Manipuri (Nga means fish), which are usually a few varieties of small freshwater fishes ( not more than 10 cms ) that are first sun- dried and then fermented in locally produced and specially designed earthen pots called Koloh or Ngari Chaphu by repeated smearing with oil without addition of salt. This dish is usually made with boiled vegetables and fermented fish mashed together along with chillies.

In this recipe no oil is used, it is a simple yet a healthy and flavorful meal accompaniment.

~Lisa Rocha ~4b

Nasi lemak

No other dish in Malaysia is as famous as nasi lemak. It consists of rice cooked in coconut milk that is traditionally served with anchovies, cucumbers, peanuts, and boiled eggs. The dish is rounded up with the addition of a spicy chili paste called sambal.

Although originally invented as a breakfast dish, soon it surpassed its original purpose and became the Malaysian national dish which can be eaten at any time. Its invention occurred from the mere necessity to exploit all ingredients which were at hand, and the popularity of nasi lemak has continually risen since the 1980s, when this farmer’s meal evolved into a dish that is frequently sold by Malaysian street vendors.
Eventually, the dish became a comfort food staple for the majority of Malaysians. With its popularity came different variations of the dish, and nowadays chicken, fried fish, fried eggs, or even curry are served on the side of nasi lemak. It is traditionally served hot and packed in banana leaves.
Viraya Shah - 4B
