Intro- Week 1 - Rebeca Pacheco

Hello everyone! My name is Rebeca Pacheco and I am 25 years old. I live in a very small town called Coward, in South Carolina. (It is Florence County). I was born in Savannah, Georgia, but I grew up in Coward. I have a twin brother, and an older brother and sister. I have been happily married for a year and 3 months. I do not have any children at the moment, but I would love to have some, whenever God wants us, too.
I work at HopeHealth, which is a medical facility that has primary care providers, Chiropractic care, Nutritional/Diabetic care, Women's health and much more. I work as Customer Service Specialist, and I love my job. I love the people I get to work with and I love that I get to help a lot of patients, especially those that do not speak English.
I am currently in the Nutrition program, here at JWU. I love to play soccer, to read, to work and to watch stuff on Hulu, Netflix or HBO. I love to help the community out, too. I am bilingual, so I know English and Spanish, so I feel like it is my duty to help out my Latino community as best as I can. I chose to go the nutritional route because I want to be able to keep my community informed on how to stay healthy and still eat what they most love. I feel like the Latino community is the less informed community about their nutritional health/facts.
The 3 topics that caught my attention the most were Bone Health, Blood and Brain, and Metabolism. These 3 topics caught my attention the most because I feel like they are important for someone who likes to stay active. We need to keep our bones strong and health in order to run and kick the ball around. Also, the brain is basically our "computer" and all our nerves go back to the brain, so it needs to stay healthy. The blood is important because it needs to stay clean and healthy in order for us to be healthy, too. Metabolism, man that metabolism is different for everyone. My husband eats for like 3 and gains like a pound a month. I, on the other hand eats a sandwich and gains like 10 pounds (lol).
I am very excited and hope to learn a lot of new stuff ! I am looking forward to sharing my thoughts with you all and reading y'alls thoughts, too.

Week 2- NFK- Nutrition

After reviewing various brochures in the NFK website, I decided to talk about the Spanish brochures. Well, what I saw that for the English one, there were more things to look at or more links to click on, than on the Spanish one. For the Spanish NFK, I think they tried to make it less complicated to navigate by putting everything in one page. In English, Treatment & Support is in a different tab, but when I click on Spanish, I can see everything in on tab. I understand and like that they did this because a lot of Hispanic/Latino people do not know how to browse a website, so this makes it simple for them to navigate.
For the Nutrition part, it has tips for eating out, tips on consuming more calories, on what to eat if you had a kidney transplant.
It basically has everything as the English one, but in on same page.
I read an article about kidney stones and dieting. The article explains what kidney stones are and explains that not all stones are the same. Article stated that the most common stones are calcium and oxalate stones. The diet that you may need to be on to prevent kidney stones is to be on a diet low in salt, calcium, oxalate, protein, potassium and certain liquids.
For patients that have had kidney stones, it is recommended to have a diet low in sodium and salt.
I love that this page has a Spanish version explaining kidney diseases and the diet we need to be in, if we have or have had that disease. It also explains dialysis, and kidney transplant, which is very important. I know that I will be reading this to my parents, so they can learn more about the kidney.
I know of two people that have some type of kidney disease, and one of the ladies I knew, did not make it. My neighbor has to get dialysis, so I know that this website will inform him a lot on what he needs to eat and teach his wife how to take care of him, too.
La Dieta y los Cálculos Renales.
