Squeeze the juice of the orange quarters directly into the water, discard the peels, then add all the ingredients while stirring to dissolve the salt, sugar, syrup and honey.Remove the string or turkey mesh, shake it out, remove the giblets if not already taken out and put them in the refrigerator (or put them in the sauce right away) and dip the turkey in the marinade, adding water to keep it immersed. Set aside in a cool place, even outside, overnight or 1-2 days before baking, remember to take it out of the brine an hour earlier (and dry the meat with a paper towel). Preheat the oven to 200 C.turkey Melt goose lard (or butter) and maple syrup over low heat. Brush the turkey with this glaze before putting it in the oven and sprinkle it on occasionally while cooking.
