Consider grading different pieces of the essay during class time. For example, as students are satisfied with their introduction, you use the rubric to grade just that section, moving around the room conferencing with kiddos as they finish. Initial paragraphs/sections as you finish and give a "grade" to that part.

Then, when kids finish writing the whole essay, you've basically already graded it.
