Has Your Taste Ever Changed? -Summer 2022-Sec02 by Dr. Martica Heaner PhD

Our families & culture expose us to certain foods when we are young. Sometimes we reject the foods because we don't like the taste or texture (or perhaps we are expressing emotions towards our family or control over our lives or bodies.) But then (shock!) we grow up and learn to love the very thing we hated for so long! Or, we might eat certain foods with our famlies when we are young and then later refuse to eat those foods (and sometimes our family don't react well to that....) Share your experiences with foods that you learned to love and also those you walked away from (and why) * CLICK on the + in the bottom right corner to add a comment. After your comment, comment on at least 2 other students comments (and please include your first name and intial, if not whole name)

One food I have learned to love but used to hate would be Ukrainian borscht. I always hated beets, to me they tasted like dirt. When I was forced to eat it at a family event I found myself asking for seconds. Somehow, whoever made the soup made it delicious and made it taste less of beats. With time, I ate the soup more often and grew to love beets. Another type of food that I learned to love is cucumber salad. It contains cucumbers, cream, and spices. Once again, I was forced to eat it at a family event. Whoever made it, made it taste delicious and from then on, I love cucumber salad.

A food that I have learned to hate that I used to love is butter. I used to butter all of my sandwiches with a very thin coat of butter. One day my mom made me a sandwich to school with an unbelievably thick coat of butter that overpowered the bread and ham. Ever since this incident I have never buttered my sandwiches and rarely eat butter unless it is used in cooking dishes and desserts.

I used to refuse to eat mushrooms because the first few times I had them as a kid, I was thrown off by their slimy texture. Now I love mushrooms and I always cook with them, adding them to pasta, or mixing them into cooked greens, or even using portobello mushrooms as burgers (instead of the beef patty.) I can't quite pin when I started to like mushrooms so much after not eating them for years, but now I am glad that I didn't keep that closed mind.

As for what I moved away from eating, I do not eat any meat anymore. I switched to a vegetarian diet 5 years ago, even though where I am from in Lithuania a lot of the culture is centered around meat. At a certain point I just realized how uncomfortable I was with the idea of eating meat and it started to have a heavy weight on my consciousness when I thought about the animals and the environment (as well as just my own health).

One thing that I grew up to despise eating was cilantro. Cilantro gave a minty and raw feeling to the food that I enjoyed and I hated how it changed the consistency on how that food tasted. As I grew older, cilantro was present in lots of Asian cuisines therefore, I could not escape the impossible. I had to prime myself to slowly enjoy the taste and the nutritional values it offers. Now I learned to enjoy cilantro on basically anything it comes with.

The food I walked away compared to as when I was a kid was fatty meats such as pork belly. As a kid, my parents would pick fatty meats and give it to me to eat and I gained lots of weight. I knew that eating an excess amount of fatty food would be bad for diet and health. I think overall it would have increased a risk on health as it will reflect on the internal and external manifestations of my food choices. As a solution, I tend to cut off the fatty parts and focus on the meats.

As a kid, I would eat about anything. Growing up I began to despise common things like chocolate, candy, potatoes, and some other things. However one such food was oatmeal. As a kid I could never get over that weird gross texture. How its both liquid yet thick enough to chew, while oats made it grainy... even describing it makes it sound like such a weird meal but it isn't that bad. At least for myself. I am able to eat cups now with no issue. I still can't really do candy/chocolate, potatoes I am getting there.

One thing I despise growing up was broccoli. The times I had them as a kid, I was very thrown off by the smell and taste. Through the years I got used to the taste and smell and started loving it. I now put it along with every meal, such as pasta, rice and salads etc. Even though I had to prime myself to enjoy both the smell and taste and has well the nutritional values it offers. I now truly enjoy eating broccoli.

What I learned to hate that I used to truly love is sweets and fast foods. I would eat it almost every day it was so good I couldn't stop is just so delicious, but it wasn't doing me any good not only was it unhealthy but was also making me sick. I have family history of diabetes, so I came into agreement with myself to change that lifestyle. I haven't touched any kind of sweets or fatty foods in over 6 years.

One thing I used to despise as a child was olivye. This salad comes from a Ukrainian background and it is a very popular dish used in every occasion. It is made with boiled potatoes, carrots, eggs, pickles, chicken, peas, and it is mixed together with mayonnaise. I would always look at this dish with side eyes and say no if someone offered it to me, but lately my parents have been making it more often for dinner and I decided to give it a go. Now I eat it every time; as long as it's fresh though.

However, the food that I used to enjoy but lately I've been disliking are potatoes. When I was little, I would always eat my meals with potatoes, but recently the texture and the taste of it just grosses me out. Unless it is indulged with a sauce or put in a salad like olivye, I will say no to potatoes. I know that they are healthy and lots of people recommend to eat potatoes, especially if they are mashed, but I'd rather stick to salads or other foods that can be as beneficial as potatoes.

As a child, I couldn't tolerate eating green peas in any form (fresh, frozen, or canned) and would gag on them because my revulsion was so intense. Biting into the skin for the inside to gush into my mouth was a tactile turn-off and the taste was gross. However, as an adult I've come to enjoy green peas. They are absolutely the best when picked fresh from my garden. I find it delightful to harvest them from the vines, shell them, and add them to a dish the very same day. Fresh peas are sweeter than frozen or canned and don't have the same texture which makes them more palatable.
I used to enjoy mushrooms a lot but have lost my taste for them in recent years. I can still eat them raw in salads (enjoy them in fresh spinach salad) but the slimy texture of cooked mushrooms is unappealing now and I find that cooking mushrooms often releases a flavor much like soil.

Growing up I used to hate leafy greens, like kale and spinach. I was exposed to a lot of pop culture messages about how kids hated greens, and so I avoided them as well. However, as I got older, I met other people my age who loved greens--and so I decided to give it a better shot and now I'm no longer averse to green leafy vegetables. I love spinach and kale smoothies!

As a kid, I used to eat a lot of processed meat such as deli meats and hot dogs. However, I think as years went on, I learned about how unhealthy they are. So now, I stay away from those kinds of foods. I don't find them particularly enjoyable anymore either.

One thing I reject as a child was carrots. I don't like it no matter which way my mom cooks it. It tasted awful to me and I didn't know how to express my dislike for it even though I knew it was full of nutrients. However about 4 years ago, my eye doctor told me I had eye problems. I asked her if there was any food that was good for my eyes and she told me that carrots help protect eyes, so I started to try eating carrots. Slowly, I started to get used to the taste and fell in love with it. Carrot juice with a little honey is my favorite flavor.
Since I was 15 years old, I stopped eating any meat or seafood for health reasons. I was overweight as a child and my doctor recommended a controlled diet. I had to give up my favorite fried chicken and shrimp for the sake of my health. In order to maintain the protein and vitamins that my body needs, I get my nutrients from different vegetables and nuts, others.

We often have lunches at work, and when we don't we all bring something to share and make a meal. At the beginning of lock down I needed to learn to cook more because I couldn't go out for food and I took the opportunity to introduce more vegetables into my diet.

I don't ever remember actually enjoying the taste of coffee in my childhood. It baffled me why anyone would enjoy something so bitter first thing in the morning. The first time I tried it, all I could focus on was the sour aftertaste and the unpleasant taste it left in my mouth. During high school however, I started drinking coffee out of necessity in efforts to stay awake longer and study. I didn't particularly care about the taste at all, as long as it did its job. Eventually, I got used to the bitter flavor and experimented a lot more with the flavors I added (chocolate, sometimes hazelnut, or something fruity) and started to actually enjoy the subtle bitterness of coffee. Nowadays I'm drinking (and actually enjoying) it everyday. It's super interesting to me how adding in different flavors to compliment a certain food can change it's taste (and your opinion) of it completely- alongside other flavors, the bitterness of a certain food or drink may not be so bad. In terms of walking away from a food, I'd definitely say it was cake (I'd have some at least twice every week!). I was massively addicted to cake when I was younger, and it showed on my weight. Walking away was no easy task, but ever since I cut cake out of my diet I've lost weight and felt more motivated to exercise frequently.

However as I started growing up more I started despising the taste of tomatoes, for some reason I didn’t like that Acid taste it has. Until this day I still never eat tomatoes anymore, personally for me I’m a very texture type of person so if I do not like the texture of something I feel it’s very hard for me to eat it, to add on something very hard for me that I never saw myself doing in the future was letting go of red meat but as i got older the taste of it was no longer good. As for some thing that I learned to love, well there are many things; as I grew up being a very picky eater but I now really enjoy eating beans. I absolutely hated eating beans, I hated it so much that in order for me to get the nutrients of the beans my mother used to compensate me with a plate of white rice after. I knew that if I ate the beans at first I would eventually only eat my white rice.

I "want" to like olives, I keep trying them hoping my tastes will change, but it hasn't happened yet) but one thing I noticed as an adult is I go through phases of taste changing. I'll go months wanting and eating things (take bananas for example) and then suddenly, the smell or sight of a banana makes me want to gag. I wonder if it's some kind of vitamin deficiency making me crave the bananas (or too much of a vitamin that's making me despise it). This happens often to me. Can anyone else relate?

I think I always had this idea that a salad had to be plain and simple and just a side dish. These days, my main portion is usually a big bowl of mixed greens with some kind of protein, finely chopped veggies, a mixture of nuts and seeds, some protein, and usually some cooked rice-- and a yummy dressing. I love the combo of fresh produce with something cooked and warm.

Instead of juice I could drink something more natural like coconut water. Or replace soda with seltzer, add lemon or any fruit like berries in water to add some flavor. It does make a difference. I have also learned that to much fruits is bad because it is adding extra sugar to your diet. Healthy food is not always tasty so to increase more veges in my diet, when i cook rice i would add shredded carrots to it so its seems like more. I love cooking rice with spinach. zucchini is a great substitution for spaghetti and its always best to make your won pasta sauce.

I grew up in Kyoto, Japan. I did not like the carrot that was produced in Kyoto. There are traditional vegetables called Kyoyasai. These vegetables are bitter and earthy. The kyo-carrot is dark red almost brown and tastes like burdock. I did not like any dish my mom made with kyo-carrots. When I came to New York, I was surprised that the carrot is vivid orange color and sweet. You can eat them fresh. I never ate fresh carrots when I was small. However, I tried fresh carrot with hummus dip and it was fresh, sweet, and savory I immediately loved it. My favorite food from childhood is miso soup. Especially when my mom made miso soup, smells and steam came from the kitchen. It reminds me of dinner time. We had miso soup every dinner. I want to have miso and soy sauce taste once a day or every other day, even though I have lived in NY for many years.

I'm not a very picky person so there were few foods that I wouldn't try or disliked. But some I can recall are tomatoes, olives, kidneys/livers (meat), and donuts. I think the reasons came down to an almost bitter taste, unfamiliarity, and the concepts behind the foods. Like knowing kidneys excrete waste and that livers deal with toxic substances, along with the taste, was a big no for me. With olives, I've never had them, the form was always odd to me and the appearance a bit spooky. Lastly, with the ever so beloved donuts, it's the idea I can't get behind and which prompts me to avoid them -- frosting on bread?? But as time went on and as I saw tomatoes appear more frequently in what I ate like soups, pizza, pasta, etc. it snuck into my diet and became one of my favorite foods (supplementally, not on it's own).

I can't remember exactly why, when it changed, or what it was but now I can't stand it. Sometimes even smelling ketchup will make me gag to the point where I start to feel bad if there's some around eating it. The only explanation I could think of is that I over exposed myself to it so much to a point when I was younger that now my tastebuds reject it on instinct. I've asked my friends or family if they've ever had a change of taste similar to this and my brother has had the opposite experience. He hated ketchup when we were younger making fun of me for how much I ate it but now he's come to enjoy it almost just as much.

Also, when I was about 10, I would not drink water because there is no taste in it, I only drink milk, juice, and soda everyday for a long time. I have gained weight from consuming a lot of sugar from the drinks. After taking classes about how bad soda and other drinks are, I started to drink more and more water to lose weight. I found out not all pasta and spaghetti are the ones they served in school, as there are different versions of it. Not surprisingly it is actually one of my favorite go-to food now. For food, I learned to walk away definitely is a honey bun, personally feel like it doesn't taste the same as it did in high school.

However, as I aged, I realized that was one of the common side dishes in caribbean food culture. I decided to give it another chance, in which overtime I grew to like it. Nowadays, plantains is a must with most meals. I can either eat it boiled or fried.

On the other hand, when I was younger I had a big craving for Hershey's Cookie and Cream Chocolate bar. I used to eat at least one bar a week. Currently, I barely eat any candy at all as I realized its not good for my health longterm.

What I’ve learned to love: This may be ironic, but for the majority of my childhood, I pledged to only eat vegetarian (plus occasionally chicken products and meals). This stemmed from slaughterhouse videos that I watched on YouTube that miraculously popped out of nowhere. However, after years of abstaining from meat (most notably beef), I now have grown a desire for steaks, meals with beef, and other meats I didn’t eat for a period of time. This carnivorous desire had started maybe five or so years ago. (PS, I do NOT eat fish as well, but I do enjoy crab and lobster, or fried/sautéed shrimp.)

What I’ve grown to hate: In fact, I’ve probably always hated salad. I wouldn’t doubt that I was fed salads at a younger age, but I can attest to the fact I’ve never eaten a full salad for the majority of my lifetime. I can eat cooked vegetables, or maybe even fruit salads, but I have never stomached the the idea of raw tossed vegetables smothered with greasy, strong-smelling dressing. This is a habitual issue, meaning my diet has habituated to not allowing salad since a very young age. I don’t think, quite frankly, I’ll ever eat a salad. Personal opinion.

However, it wouldn't be until I reached the age of 14 or 15 that I absolutely fell in love with vegetables with my favorites being broccoli and spinach. Now, of course, I did eat vegetables as a kid, but not enough as I do nowadays. Most of my homecooked meals, if applicable, will always include broccoli or spinach (typically steamed broccoli). At a steakhouse I go to with my family, we get sides and 15 year old me would go straight to French fries, but now I go for their steamed broccoli.
