         <title>Day 1- Sunday 17/2/2019</title>

         <description><![CDATA[<div>Today is the first day of my internship and I have arrived at the Verandah Lounge of Federal Hotel at 9am as have informed by the F&amp;B director of Federal Hotel- Mr Sathi. Then my colleague Angie has called Mr Sathi to inform him that we have arrived. Then he asked Ms. Siti which is the captain of the Kontiki Restaurant in Federal Hotel to lead us. She first bring us to take a look at where we should punch our card, where we can change our uniform, where is the staff canton and so on. 3 of us from UMK are trainee placed in the F&amp;B department. We were taught way to work such as wiping cutlery, clear plates, arranging plate and more.          <title>Day 2- Monday 18/2/2019</title>

         <description><![CDATA[<div>This is my second day of my internship. Today I arrive late at my work place at 8.30am as my shift starts at 8am. I have informed my manager that I will be late due to the reason of I’m not familiar with the train schedule so I have missed train from kepong station to Sungai Buloh station. Once I arrived at the hotel, I straightly change into uniform and got to work. Today is lesser guest as compared to yesterday as today is weekday. Today job is still usual job: wiping plates and cutleries, setting up table, clear plates and so on.          <description><![CDATA[<div>This is the third day of my internship. I came to work sharp at 8am as scheduled by manager. Once arrive change uniform and go to Kontiki Restaurant as usual. Today we were taught to recognise some of the general manager and head of department in the restaurant which they will come to have their breakfast and lunch in this restaurant very often. I have been taught what kind of drink they like to have during their breakfast and lunch. But at the moment I still cannot recognise each of the GM and the HOD.          <description><![CDATA[<div>This is the fourth day of my internship. Today I arrive at Kontiki Restaurant at 8am sharp as scheduled. Once I arrived at the restaurant, I do the usual things like clear the plate, wipe cutlery and setting up table. Today breakfast buffet also not too crowded. At 3pm Mr Sathi see us at the meeting room to have a conversation with us. He asked us to do self introduce and asked us a few questions. He also have given us a lot of information on the hospitality industry.          <description><![CDATA[<div>This is the fifth day of my internship. I arrived at Kontiki Restaurant sharp at 8am as scheduled. Today also the same things that I do at the restaurant which are wiping cutlery, clear plates, serve coffee for customers and setting up the tables. I feel that we are very busy every day because we always have a lot of work to do and it seems cannot finish on time. We always need to work at least 30 minutes more than the time that have been scheduled.          <description><![CDATA[<div>Today is the sixth day of my internship. Today I arrive at Kontiki Restaurant by 8am as scheduled. Today I also do the same thing as usual. Today I also had learned how to take ala carte order from the guest. When there is guest want to order ala carte menu, we will give them menu, then we take their menu, write their menu on the captain order which there is 2 sheet, one white one pink. White colour captain order is for cashier record while the pink colour is for the kitchen reference. The pink colour captain order will be bring to the kitchen and chef will prepare the food.          <description><![CDATA[<div>Today i come to work at 8am sharp at scheduled. Today is a busy day as there are 200+ pax during breakfast and 100+ pax during hi tea session. Hi tea buffet of Kontiki Restaurant is only available on weekend which the dining time is from 12.30pm to 4pm while the weekdays is lunch buffet, dining time from 12pm to 2.30pm. There is also dinner buffet every Friday and Saturday. So we need to do mise en place very fast to ensure that the operation go smooth. The dinner buffet start at 6.30pm to 10pm.          <description><![CDATA[<div>Today I arrived at work by 8am as scheduled. Today is also a busy day as breakfast also having 200+ pax and hi tea buffet is 200+ pax. Today can be said that hi tea buffet is almost full house where we need to keep clear all the plates quickly, and to replace the plates for the guest. During hi tea time, I refill the water glass of the guest. Then I realise one of the guest water have dropped some food into it. Then I immediately ask her permission to change a new one for her because at first she asked me just to fill in the water. I changed her water and she is happy with my working attitude. She even asked me to work in her company. This guest really made my day.          <description><![CDATA[<div>Today I arrive at Kontiki Restaurant at 8am as usual. Today I become the hostess of Kontiki Restaurant. The job scope of being a hostess is to greet guests and ask their room number to check whether their room include breakfast or not. The guest will have to pay for their breakfast if their room is not include breakfast. The normal rate for breakfast buffet is RM48 per pax and hotel guest entitle to 30% discount which is RM33.60 per pax. Hostess also will need to usher the guest to their seat and ask them what hot drink they would like to have. Today breakfast buffet is not so crowded. At 10.15am, hostess also need to inform all the guests last call for buffet as the buffet will be end at 10.30am. After being hostess, I do the mise en place like usual even there is no booking for the lunch buffet. <br><br>Photo: take out the plates that have been washed by stewards. </div>]]></description>

         <description><![CDATA[<div>Today I go to work at 8am sharp as scheduled after my off day. Once I arrived at Kontiki Restaurant, I go to the front door of the restaurant as hostess of the day. I do the same thing such as greet guests and take their room number before they go into restaurant to have their breakfast. I also usher them to their seat. I do last call at 10.15am as the buffet will close at 10.30am sharp. Then I help to clear all the food tags. The food tags are placed in front of all the food so that the guest can clearly know what is the food they eat. After breakfast session I do the same mise en place for the lunch buffet session.          <description><![CDATA[<div>Today I arrive at work as usual at 8am as scheduled. When I arrive at Kontiki Restaurant, I started to do the plates clearing as today breakfast buffet is also quite crowded. Today I am not a hostess due to one of my colleague are not feeling well so she replace my place to become a hostess. So when clearing the plates, we need to ensure that the guest will not stack up their own plate. After breakfast buffet we do mise en place like usual for the lunch buffet. Today there is no reservation for the lunch buffet, there are only a few walk in guest. Today there are walk in guests who want to have ala carte menu. They ordered Teh Tarik with ginger and 2 soft drink. So this is the day where I learned how to make Teh Tarik with ginger. <br><br>Photo: clearing up table </div>]]></description>

         <description><![CDATA[<div>Today is also a busy day where breakfast buffet has 200+ pax and hi tea buffet 200 pax. Today also keep on doing the turnover of the plates and cutleries. Today we had a training on the new menu that comes out from Kontiki Restaurant which is Ayam Goreng Berempah. This is a new menu for basic lemak or chicken rice where guest have a new choice for the type of chicken.          <description><![CDATA[<div>Today I go to work as usual at 8am. Today also not too busy as breakfast buffet is below 100 pax while lunch buffet only below 20 pax. I do the same job as usual. Today I also learned new thing where I went to other restaurant- Mandarin Palace of the hotel which serve Chinese cuisine as today there is an event. They lack of staff to handle so they request us from Kontiki to help them. Today I learned on how to do table setting for the chinese cuisine.          <description><![CDATA[<div>Today I go to work as usual. The new thing that I learned today is different kind of drink such as hot lemon tea, ice coffee, ice lemon tea and fresh fruit juice. This is the guest ala carte order. Once they order we will have to do as quick as possible (in 5 minutes) and serve it to them. Once I arrived non stop clearing and replacing all the plates bowls and cutlries. After that, I learned new thing on doing the food tag where we need to check which menu there are using for the day lunch buffet as there are Malay menu, Indian menu, Chinese menu, western menu, Japanese menu and so on.          <description><![CDATA[<div>Today is a super busy day as today have a large group of guests having breakfast at Kontiki Restaurant- 401 pax. Once I arrived at work I keep on clearing plates and replace the new plates, bowls and cutleries. Keep on running up and down to fulfil the guests requests. After breakfast finished, me and colleagues do the mise en place quickly for the hi tea buffet that starting at 12:30pm.          <description><![CDATA[<div>Today breakfast buffet also as busy as yesterday because of the big group - 4u Malaysia. So the same routine goes on. At around 4pm, I was asked to help at Verandah Lounge as Ms. Fauzah is very busy at there because of the afternoon tea guests. One set of the afternoon tea is for 2 person and include coffee or tea. The afternoon tea is available everyday from 3pm-6pm. The afternoon tea set is prepared in the Kontiki Restaurant and I help to send it to Verandah. There are only a few reservation for the lunch buffet so I just work like normal. Today there is a guest at the pool side that ask for menu. So they asked me to follow one of the maid to do room cleaning. Then at 10am they ask us to go briefing and do morning exercise which morning exercise held every Saturday morning. Then I was assigned to clean the main entrance area which I wipe all the pillars, flower pots, glass wall and also vacuum the area. After that I was asked to wash the gents and ladies toilet using scrubbing machine  with Angie. We wipe the floor using the dust mop and sweep the dust inside dustpan. After that we also clean the glass wall and the area together. At 5 pm, we took over Mr. Joseph, one of the staff in public area section as he is going to break. So we just keep on checking the area and ensure the place and toilets are clean. Today I started to work at front linen. The job scope of front linen is to pack and send bedsheets, pillowcase, towel and more to the room maid. We also need to collect back the dirty linen from the room maid once they cleaned up the guests rooms.          <description><![CDATA[<div>Today is the second day in front linen housekeeping. So as usual once I arrived at work I prepare the clean bedsheets, towel, pillowcase for each floor. Normally we will arrange 20 twins bedsheets, 10 king bedsheets, 20 bath towel, 10 floor mat and so on for tower wing. If the room maid out of the item, they can call us anytime so that we can send the item to them. After prepared the items, we deliver to each floor from 14th down. Issuing uniforms to the staffs and also record the dirty uniform that are sending for cleaning. Today also have guest laundry. We also received the laundry of the department mangers. So we need to record separately. When I arrived at kontiki kitchen, one of the senior told me to check the buffet area and we have to ensure that the food is always enough for the guest. If the food become lesser, we need to top up the food from the warmer.          <description><![CDATA[<div>Today is the second day in kitchen. Today once I arrived I also do the same thing like yesterday which I check for the food and top up the food that had finished. Today I also learned how to bake the croissants and Danish pastries. For croissants each tray can only fit in 16 pcs maximum because it will be expand while baking. After placing nicely on the bake tray, then can put into the oven to bake. Today there is a chef taught me to cut fruit as the fruits finished. Then I also be the runner of the kitchen whereby I keep going down stairs walk in chiller to take the ingredients for the chef for example cucumbers, tomatoes, bread and more. Today chef Laila also taught me how to make cucumber mint salad. First we need to cut cucumbers into slice, then add with mint sauce and plain yogurt. She came after her leaves for 4 days. Today I have learned how to make a new salad which is called Russian salad. Russian salad is the combination of mix vegetables, mint sauce, herbs and sour cream. Today I also help to make tea break set which is sandwich for the function for 10 pax.          <description><![CDATA[<div>Today is the sixth day in kitchen. So today also as usual, check and top up the food. Then I also help to make noodles for the guest when they requested. I also help to go basement walk in chiller to get vegetables for the chefs. When the noodles condiments like spring onion and chilli I’ll cut and refill it back. Today I also have learned new salad which is chick pea salad. Chickpeas, red kidney beans, cucumbers, tomatoes are mixed together with salt pepper and olives oil. So today Chef Leiza asked me to cut ingredients for the mushrooms soup and also prepare ingredients for pasta. So I cut 2 types of mushroom: shiitake mushrooms and white button mushrooms, onions and peppers.          <description><![CDATA[<div>Second week in kitchen. Today once I arrived at work I go to help at egg station which I make omelette and also sunny side up for the guest. To make omelette there are a few condiments to put in egg such as bell pepper, tomato, onion, mushroom and cheese. At first I am not familiar and the omelette I made is a bit ugly but after a few omelette made I know hot to make the omelette and it looks more nice. Today there are also guest who ordered ala carte menu- nasi lemak.          <description><![CDATA[<div>Today I go to work as usual 8am. Once I arrived I also go to the egg station to help make omelette and sunny side up. After that, Chef Leiza ask me to help her to make pizza . So she taught me way to do pizza. There are 4 types of pizza to do for the western lunch menu which are: seafood pizza, chicken tandoori pizza, beef pepperoni pizza and also vegetarian pizza. All for them have the same base which is tomato base just the ingredients on top are different. Seafood pizza consist of oyster, squid, prawn, cherry tomato and capsicums. Beef pepperoni pizza consist of beef, pineapple, capsicum, olives and cherry tomato. Chicken tandoori pizza consist of chicken tandoori, cherry tomato and mint yogurt sauce on top of it.          <description><![CDATA[<div>Today as usual once I arrived at work I help at the egg corner. So today I also help chef to prepare the mini garden salad for the ala carte menu. The mini garden salad consist of one piece of iceberg lettuce, one piece purple lettuce, one piece tomato and 2 piece of cucumbers. So I arrange nicely and do around 2 insert as chef has manuals carte order. Then I also help chef to cleanup the raw vegetables fridge and replace the vegetables in the fridge. After breakfast, clear the buffet and set up back the buffet for lunch.          <description><![CDATA[<div>Today I was scheduled to go work at 2pm until 10pm. However, I forgotten about the schedule and go to work at 8am. So today is also as usual help at the egg station. After that, Chef Leiza asked me to help her fry beef slice for the lunch buffet. And she also told me that the beef no need to be too cooked, just some colour on both surface of the beef slice will do. Today Chef Daniel also teach me another menu which is boxing chicken.          <description><![CDATA[<div>So today is the first day I’m going to 18th floor, Bintang lounge kitchen. But when I arrive at 2pm, I go to kontiki kitchen first as bintang kitchen is not open yet. So omce I arrive I help to cut the fruits as the fruit finished. The i also cut fruits for the fruits rojak. Then chef asked me to help him make Vietnamese spring roll for the afternoon tea. He said the most important thing in Vietnamese spring roll is the colourful aspect. At 3.30pm, I went up to bintang kitchen to help the chef at there.          <description><![CDATA[<div>Today I go to work at 2pm. So I go to kontiki kitchen to assist the chef at there. Today I help to cut fruits, cucumbers, and also make Vietnamese spring roll for the afternoon tea at Verandah lounge. At 3pm, I go up to bintang kitchen. So today I get to learn the way to make garlic butter for the garlic bread. So first we need to leave the butter at the room temperature, once the butter softened, we chop garlic and english parsley add into the butter. Then we add some seasoning like lea and Perkins sauce and some salt then mix well. The garlic butter is done. Normally at 5pm, we will need to bake variety kind of bread. The bread is to serve once guest is seated.          <description><![CDATA[<div>Today i go to work at 2pm. As usual I go to kontiki kitchen first. Once I arrived, I help at the sushi station as there are a few guests that waiting for the sushi and sashimi. Then I help to clear the lunch buffet also. At 3 pm I go up to bintang kitchen. Today chef teach me to make onion soup. This is because the onion soup stock finished, so he need to make a new onion soup. So he asked me to cut 1/2 kg of onion, sauté with some chopped garlic and then add chicken stock and cook until it turn into thicker soup. The onion soup end up clear, not creamy type. So today I help to measure all the ingredients for the weight of all of them such as lamb rack, salmon fish, chicken vegetables and so on. Today also we do stock take together at the kitchen. Once finished, we then started to work for the guest order.          <description><![CDATA[<div>Today I start work at 2pm and this is also the last day in kitchen department. As usual I help at kontiki kitchen first and go bintang kitchen at 3pm. So today I help chef to take out the fish bone from salmon fish that he has cut and clean up all the organ of the fish. After done then I help for the normal operation. Today I also learned on how to make the batter to fry fish for fish and chips. According to chef, this batter also can be used to make onion ring. Basically it is the combination of flour, baking powder, salt and water. SRQ which is standard room consist of 1 queen bed. Sawt and sawk is room with inner view consist of 2 single beds and another with 1 king size bed. While there are also SRTP which has 3 single beds inside the room. DQQ is family room which consist of 2 queen beds. So today he taught me way to key in the booking according to the information of the guest for example either which company the guest booked with: booking.com, agoda, Traveloka or Expedia etc. Then we need to key in the actual date that they are checking in and checking out. After that we key in the types of room that they have booked SRT, SRQ or TMK, TMT and so on. Then we need to figure out the amount of the booking and see whether it is paid to the agent or not. Most of the booking I key in is the booking from booking.com, Agoda and Traveloka. Most of the booking by booking.com is not paid yet and the guest need to pay when they check in i the hotel. And most of the guest who book using agoda and Traveloka, they have paid for the room rate in advance. So they will just check in when they arrive in the hotel.          <description><![CDATA[<div>Today I start working at 12pm according to DM Maniam. So I go to work at reception. Today I have learned that we can take deposit of foreign currency from the guest in advance if they do not have any Malaysian ringgit. When we collected the foreign currency, we need to put in a plastic bag and clip the receipt together with the currency and give the currency back to the guest when they pay us Malaysian ringgit. <br>Video: foreign currency with receipt </div>]]></description>

So I do all the booking and there is something new that Mr Thomas taught me which is the booking from privilege club is different style.
