Then my colleague Angie has called Mr Sathi to inform him that we have arrived. Then he asked Ms. Siti which is the captain of the Kontiki Restaurant in Federal Hotel to lead us. She first bring us to take a look at where we should punch our card, where we can change our uniform, where is the staff canton and so on. 3 of us from UMK are trainee placed in the F&B department. We were taught way to work such as wiping cutlery, clear plates, arranging plate and more. We then also being introduced to the manager of the restaurant which is Kak Roslind.

Once I arrived at the hotel, I straightly change into uniform and got to work. Today is lesser guest as compared to yesterday as today is weekday. Today job is still usual job: wiping plates and cutleries, setting up table, clear plates and so on. Today our manager also teach us how to make coffee and tea for guest.

I have been taught what kind of drink they like to have during their breakfast and lunch. But at the moment I still cannot recognise each of the GM and the HOD. Today Ms Ros also give us information of the ala carte menu in the restaurant.

Today breakfast buffet also not too crowded. At 3pm Mr Sathi see us at the meeting room to have a conversation with us. He asked us to do self introduce and asked us a few questions. He also have given us a lot of information on the hospitality industry. I am glad that Mr Sathi can spend some of his precious time to share some important information with us.

I feel that we are very busy every day because we always have a lot of work to do and it seems cannot finish on time. We always need to work at least 30 minutes more than the time that have been scheduled. It is tiring but I have already almost used to the culture of this restaurant.

When there is guest want to order ala carte menu, we will give them menu, then we take their menu, write their menu on the captain order which there is 2 sheet, one white one pink. White colour captain order is for cashier record while the pink colour is for the kitchen reference. The pink colour captain order will be bring to the kitchen and chef will prepare the food. Once the food ready we will send it to the guest.

Hi tea buffet of Kontiki Restaurant is only available on weekend which the dining time is from 12.30pm to 4pm while the weekdays is lunch buffet, dining time from 12pm to 2.30pm. There is also dinner buffet every Friday and Saturday. So we need to do mise en place very fast to ensure that the operation go smooth. The dinner buffet start at 6.30pm to 10pm. From 4pm to 6.30pm which we only have 2 and half an hour to do the turnover.

Today can be said that hi tea buffet is almost full house where we need to keep clear all the plates quickly, and to replace the plates for the guest. During hi tea time, I refill the water glass of the guest. Then I realise one of the guest water have dropped some food into it. Then I immediately ask her permission to change a new one for her because at first she asked me just to fill in the water. I changed her water and she is happy with my working attitude. She even asked me to work in her company. This guest really made my day. Today I also do ot for 2 hours as required by our manager Ms Ros due to lack of staff to finish up the work.

Today I become the hostess of Kontiki Restaurant. The job scope of being a hostess is to greet guests and ask their room number to check whether their room include breakfast or not. The guest will have to pay for their breakfast if their room is not include breakfast. The normal rate for breakfast buffet is RM48 per pax and hotel guest entitle to 30% discount which is RM33.60 per pax. Hostess also will need to usher the guest to their seat and ask them what hot drink they would like to have. Today breakfast buffet is not so crowded. At 10.15am, hostess also need to inform all the guests last call for buffet as the buffet will be end at 10.30am. After being hostess, I do the mise en place like usual even there is no booking for the lunch buffet.

I do last call at 10.15am as the buffet will close at 10.30am sharp. Then I help to clear all the food tags. The food tags are placed in front of all the food so that the guest can clearly know what is the food they eat. After breakfast session I do the same mise en place for the lunch buffet session. Today lunch buffet reserved for 60+ pax. After lunch buffet I also do the mise en place again.

So when clearing the plates, we need to ensure that the guest will not stack up their own plate. After breakfast buffet we do mise en place like usual for the lunch buffet. Today there is no reservation for the lunch buffet, there are only a few walk in guest. Today there are walk in guests who want to have ala carte menu. They ordered Teh Tarik with ginger and 2 soft drink. So this is the day where I learned how to make Teh Tarik with ginger.

They lack of staff to handle so they request us from Kontiki to help them. Today I learned on how to do table setting for the chinese cuisine. It is totally different from  what we usually do.

One set of the afternoon tea is for 2 person and include coffee or tea. The afternoon tea is available everyday from 3pm-6pm. The afternoon tea set is prepared in the Kontiki Restaurant and I help to send it to Verandah. At there I also help to fill in the coffee and tea for the guests.

Siti ask me to go check the furniture of 4th floor whether it is taken out or not because hotel is changing the carpet in 4th floor.

After break, supervisor asked me and Angie to use Autosol metal polishing paste to polish the metal of the front door  in main entrance.

So I wipe everything like yesterday did and vacuum the area. Today I also help Angie to clean the glass wall after I finished my job in main entrance. I help Angie to put shampoo on the glass wall and she clear the water on the surface. After break we polish the metal of back entrance using autosol metal polish paste.

At night, Mr Zakir , briefs me and Angie on the usage of floor polishing machine and we tried to use the machine as the machine are quite difficult to use .

Then we add some seasoning like lea and Perkins sauce and some salt then mix well. The garlic butter is done. Normally at 5pm, we will need to bake variety kind of bread. The bread is to serve once guest is seated. There are around 4 kind of bread and the quantity will be around 20+ one tray to bake.

The chef also mentioned that the actual way to cook onion soup is to put around half can of beer and it is best served with cheese bread. Then we need to write comment so that the receptionist will know about the payment and also guest preferences of the room like smoking or no smoking room.

Most of the booking I key in is the booking from booking.com, Agoda and Traveloka. Most of the booking by booking.com is not paid yet and the guest need to pay when they check in i the hotel. And most of the guest who book using agoda and Traveloka, they have paid for the room rate in advance. So they will just check in when they arrive in the hotel. So normally we will not need to print the rate for the guest who booked using agoda and Traveloka on their reg card.

So I also do the same thing like yesterday did. In doing the key in system, I must ensure that the information are being key correctly and after done doing, I need to write the confirmation number on the top right corner so that it is easy to be find for the attachment of the guest reg card. When doing the reservation for today date check in, we need to straightly print out the reg card and photocopy the booking confirmation and attach together and put at the arrival box.

Today I also learned on way to do parking ticket as the in house guest will have complimentary parking at Plaza Low Yat while the guest who come dining will have to pay flat rate of RM7. 
Then we need to validate at the machine there and ask the senior staff to sign for authorisation.

Night shift starts at 11pm until 7am. The job that we need to do is the print the reports. The first report we need to print is the newspaper report. Newspaper report is use to order newspaper. The re are 4 types of newspaper we order which are the star, new strait times, nanyang and sinchew daily.  My senior staff told me that previously they will send newspapers to each of the room for the room guests, however, nowadays newspaper is just send based on request to save paper as there are a lot of guest can see news through smartphone. The newspaper we also need to order for the managers.

We need to count the cashier drawer every time and also the hop on hop off ticket that available in the drawer and record it down on the long book. Normally each cashier drawer will have cash of RM1500. When we do closing the drawer will still have Rm1500. When there is a group checking in for the next day, we need to prepare the room number in advance and also prepare the room key card so that they can check in faster.

When we collected the foreign currency, we need to put in a plastic bag and clip the receipt together with the currency and give the currency back to the guest when they pay us Malaysian ringgit.

So I started to work at 9am. I have been offered by the front office manager, Encik Rahman to stay as a permanent worker, a front office assistant at The Federal Kuala Lumpur. I am so happy that I’m approved to stay working in this hotel. Even though the salary is not high here but I believe that all I need at this moment is not only money but the experience in this industry.
