The figured out how to freeze dry food. The nights in high mountains are very cold. The Inca's used that to their advantage and put the smaller potatoes from harvest and laid them out on flat land for three nights and let them freeze. During the daytime they would be stomped on to get rid of any remaining juices/water in the    potato then froze for another two nights. Villigers would be able to eat these if there was a drought or any other events where crops would not grow.
