These are protected by the corm underground. C. sativus generally blooms with purple flowers in the autumn. The plant grows about 10 to 30 cm high. C. sativus is a triploid with 24 chromosomes, which means it has three times the haploid number of chromosomes. This makes the plant sterile due to its inability to pair chromosomes during meiosis.

In Greece its vernacular name is "Crocus Kozanis" since Kozani is the only city known to make mass production of it.

Health Benefits of Saffron

Saffron contains several plant-derived chemical compounds that are known to have been antioxidant, disease preventing, and health promoting properties.

Their flower pistils compose several essential volatile oils, but the most important of them all is safranal which gives saffron its pleasant flavor.

The Mediterranean basin stretches c.3,800 km east to west from the tip of Portugal to the shores of Lebanon and some 1,000 km north to south from Italy to Morocco and Libya. Within the European Union, the Mediterranean Region encompasses seven Member States either partially (France, Portugal, Italy, Spain) or completely (Greece, Malta, Cyprus).

The climate is characterised by hot dry summers and humid, cool winters but it can also be notoriously capricious with sudden torrential downpours or bouts of high winds (eg. the Sirocco, the Mistral) occurring at various times of the year. These climatic conditions have a profound influence on the vegetation and wildlife of the region. So does its varied and contrasting topography – the Mediterranean Region offers an ever changing landscape of high mountains, rocky shores, impenetrable scrub, semi-arid steppes, coastal wetlands, sandy beaches and a myriad islands of various shapes and sizes dotted amidst the clear blue sea.

Having escaped the last Ice Age, all these areas harbour their own special kind of wildlife and habitats. As a result, the Mediterranean has not only a very rich biodiversity but also a large number of species that exist here and nowhere else in the world. The rate of endemism is exceptionally high both on land and in the sea. Of the 25,000 flowering plants identified so far–representing around 10% of all known plants on earth – more than half are endemic to the region. Not surprisingly, the Mediterranean is considered one of the top biodiversity hotspots in the world.

Cosmos: A Sketch of a Physical Description of the Universe is an influential treatise on science and nature written by the German scientist and explorer Alexander von Humboldt. Cosmos began as a lecture series delivered by Humboldt at the University of Berlin, and was published in five volumes between 1845 and 1862 (the fifth was posthumous and completed based on Humboldt's notes). In the first volume of Cosmos, Humboldt paints a general “portrait of nature”, describing the physical nature of outer space and the Earth. In the second volume he describes the history of science.Widely read by academics and laymen alike, it applied the ancient Greek view of the orderliness of the cosmos (the harmony of the universe) to the Earth, suggesting that universal laws applied as well to the apparent chaos of the terrestrial world. Humboldt goes on to suggest that when one contemplates the beauty of the cosmos, one can obtain personal inspiration and a beneficial, if subjective, awareness about life.
</sup>

Cosmos was influenced by Humboldt's various travels and studies, but mainly by his journey throughout the Americas. As he wrote, “it was the discovery of America that planted the seed of the Cosmos.” Due to all of his experience in the field, Humboldt was preeminently qualified for the task to represent the universe in a single work. He had extensive knowledge of many fields of learning, varied experiences as a traveler, and the resources of the scientific and literary world at his disposal.

This is the first ever study to synthesise multiple changes in the environment that impact the livelihoods of people in the entire Mediterranean Basin.

Average temperatures in the Mediterranean region have already risen by 1.4°C since the pre-industrial era, 0.4°C more than the global average. During the past two decades, sea level has risen by 6 cm and sea water acidity has significantly increased.

    Water shortages

Even if future global warming is limited to 2°C, as prescribed by the Paris Agreement, summer rainfall is at risk of being reduced by 10 to 30% in some regions, thereby worsening existing water shortages and causing loss in agricultural productivity, particularly in southern countries.

Under such circumstances, irrigation would have to be increased by 4-22%. This demand will be in competition with other uses (drinking water, tourism, industry).

Given the ongoing switch to more animal-based food production, southern countries are at risk of becoming more dependent on trade. Fisheries are also at risk, due to climate change, acidification and overfishing.

    Rising sea level

The melting of ice in Antarctica, Greenland and many mountain areas accelerates sea level rise more than recently estimated.

Some doubts remain on the origin of saffron, but it is believed that saffron originated in Iran. However, Greece and Mesopotamia have also been suggested as the possible region of origin of this plant. C. sativus is possibly a triploid form of Crocus cartwrightianus. Saffron crocus slowly propagated throughout much of Eurasia and was later brought to parts of North Africa, North America, and Oceania.

Saffron is spicy with a slightly bitter taste and therefore must be used sparingly, which is just as well due to the cost of the spice.

Although saffron has a strong flavour, it is mainly used for its colour, adding a bright yellow-orange tint to the food. This is where the "paella valenicana" and many Indian rice dishes obtain their typical bright yellow colour.
