Commercially, fructose is derived from sugar cane, sugar beets, and maize. High-fructose corn syrup is a mixture of glucose and fructose as monosaccharides.<br><br>The functions:One of the major biological functions of fructose is it acts as an alternative metabolite in providing energy especially when glucose is not sufficient while the metabolic energy demand is high. It can enter glycolysis and produce intermediates for cellular respiration.<br><br></div>]]></description>

There are three main classes of amylase enzymes; Alpha-, beta- and gamma-amylase, and each act on different parts of the carbohydrate molecule.</div>]]></description>
