I competed in the dessert competition today with my sticky toffee pudding, baileys espuma, whiskey butterscotch and praline dish. It was great fun and looking forward to Teams competition tomorrow !

So unbelievably proud of the three of us for doing so well individually and as a team. By far the best feeling holding up 6 gold medals and two trophies.

What a blast

This was such an amazing trip through and through. Seeing the old city of Side, Apollos temple, the Saturday market, the food markets, the competition venue all right by the sea. I think we all represented Ireland as best we could. Challenging ourselves to the max in the competition, overcoming every curveball thrown at us. Receiving feedback from the judges was great for understanding where we went wrong and where we could improve.

What a team. What a result.

Award ceremony where we won gold medals for our team competition, a gold medal each for our individual competitions and Deacon and Dara won trophies. So proud that the work we put in paid off, and so happy to have gotten the opportunity to go to Turkey, what a great experience.

First day in France :)

I felt nervous at the airport but everything was fine, we had no problems and arrived in Nantes, France. The weather was wonderful. We spent some time there waiting for the bus to take us to the train station to catch our way to Rennes. We arrived and were able to eat something, as it was Easter Monday the shops were closed so we decided to eat Japanese food. We arrived at the flat we rented, it was very nice. And we sort of planned what we were going to do on Tuesday :).

We didn't walk around much because we didn't find much and we were tired, so we decided to walk a little and go back to the flat.

Second day :)

Today we walked a lot from 10am until we returned at 8pm. We explored the center of Rennes. It's really beautiful, the streets remind me of a place in my country and some buildings reminded us of the movie 'Beauty and the Beast'. The weather has been great, sunny and very warm.

We met with the competition organizer at the venue and she showed us where the competition would be held and which kitchen I would possibly be in. In the afternoon we met with the young lady who is organizing the competition and she showed us the place, where it would be and where they were going to present the winners and other places. The faculty is huge. While we were there I felt nervous haha, but it's not something I can avoid, it's my first culinary competition. I've been relating it to when I played volleyball, because I would go to games and focus on the game, not the spectators. I think that's helped me keep my nerves under control. But I can't wait for tomorrow, Wednesday, which is the day of the competition. I'm so nervous! But everything will be alright, I know what I'm doing and whatever happens, happens.

We ate some crepes, did a little grocery shopping, and went back to the flat to get the ingredients ready for tomorrow.

Third day :)

So today was the competition. I was able to concentrate and prepare my dessert. But it didn't turn out as I expected.The whipping cream didn't work for me, so the dessert decoration didn't turn out as I expected either; it erupted, haha. But the other desserts were impressive, very creative. A chef who was helping out was a really nice guy; he gave me words of encouragement when he saw that the dessert hadn't turned out as he expected. But in the end, I got a good score for flavor, and that's what matters in the end. It was my first competition, so I learned a lot, especially how the environment can affect the dessert. Next time, I'll keep in mind several details I hadn't noticed before that I should mention or do. After the competition we returned to the flat and rested a bit, I spoke with my parents and they congratulated me for having participated. Then we had dinner with the event coordinator, a very nice person too, very kind and attentive. She took us to a French restaurant so we could try some French dishes, it was delicious :9.

Fourth day :)

Today we went to Le Mount St. Michel. My God, what a beautiful place. I didn't know this place was in Rennes! I saw it in a series I love and I've wanted to visit it ever since. I wasn't expecting such a pleasant surprise! The place was full of tourists and school tours haha, but you could walk around peacefully. We went into the museums they had and it was great. I think it's incredible how they built the place in the middle of the water, it's amazing. I loved it and I would love to go again :'). We had a great time with Ewelina. The weather was great when we arrived, but it got really cold on our way back! We were freezing a little, haha.

Last day :')

Today was our last day in France. We returned to Nantes to explore during the afternoon while we waited for our flight.What a lovely place! We walked around getting to know the place a little and ate some ice cream that was very tasty :9. We went to the airport and we were delayed one hour because of the weather in Dublin. But it was fine, I actually fell asleep 10 minutes before landing haha So I didn't feel much of the turbulence or the landing.

Thank you for the opportunity you gave me; I learned a lot and it was a great experience. It made me realize that I want to continue in the world of pastry and keep learning many techniques.

This was my dish that I was cooking on competition. I had 3 hours to show my performance, when I had to stay focused and confident, it definitely sharped me and I really enjoyed it!
