         <title>Quick Pickled Vegetables</title>

         <description><![CDATA[<div>From Troy Kids Garden and Youth Farm<br><strong>Ingredients:</strong></div><ul><li>2 ½ c ANY vegetables</li><li>½ c fresh dill</li><li>1 c white vinegar</li><li>4 T salt</li><li>5 peppercorns</li><li>1 T pickling spice</li><li>Water</li></ul><div><br><strong>Directions:</strong></div><div>Chop vegetables into bite size pieces. In a 1 quart mason jar*, combine vinegar, dill, and salt. Next, add peppercorns and pickling spice. Add vegetables to jar. Fill jar to the very top with water, seal jar, and set upside down. Allow to sit for at least 10 minutes. They will keep for up to 2 weeks if refrigerated.  Enjoy!<br><br></div><div>*if a jar is not available, the same process can be done in a bowl, </div><div>following the same instructions, filling the bowl with enough </div><div>water to cover vegetables. Cover bowl to allow to sit.</div>]]></description>

Line a non insulated cookie sheet with parchment paper.<br>Step two with a knife or kitchen chairs carefully remove the leaves from the thick stems and tear into bite-size pieces. Wash and thoroughly dry kale with a salad spinner. Drizzle kale with olive oil and sprinkle with seasoning salt.<br>Step three bake until the edges are brown but are not burnt 10 to 15 minutes.</div>]]></description>

         <description><![CDATA[<div>(from Nourished Media LLC)<br>6 large ripe tomatoes (chopped) <br>1 cucumber (peeled if the skin is bitter and chopped) <br>1 small red onion (chopped) <br>about 1 cup fresh curly parsley (chopped fine)<br>juice of 1 lemon (strained) <br>about 1/4 cup unrefined extra virgin olive oil <br>unrefined sea salt and freshly ground black pepper (to taste) <br>1. Toss the chopped tomatoes, cucumber, onion and parsley together in a big mixing bowl but take care not to bruise the tomatoes to badly. <br>2. When the the vegetables and parsley are thoroughly mixed together (so as to ensure that every spoonful of salad yields a little bit of cucumber, parsley, onion and tomato), pour the juice of one lemon and 1/4 cup unrefined olive oil over the salad. Season zucchini and squash with salt and pepper. Cook the squash in a single layer until golden brown. </li><li>Layer the tomato slices, zucchini, squash, and onion on the bottom of the pie shell. Sprinkle basil on top. Combine the grated cheeses and mayonnaise together. Smooth cheese mixture over the top and sprinkle parmesan cheese on top.          <description><![CDATA[<div>Note:  Need freshly made jam for this recipe.<br>Cream: 1C. Brown Sugar and 3/4C. Butter.<br>Mix:  1 1/2C. Flour and 1 1/2C. Oatmeal.  Mix everything together until crumbly.  Pat 3/4 of the mixture into the bottom of a 9x13" pan that has been sprayed with cooking spray.<br>Spread:  1C. of Jam (Raspberry usually works best) over the mixture.  Top with the remaining mixture.<br>Bake:  30-35 Minutes at 325 Degrees.<br>Cut bars into 2" squares when they have cooled completely.</div>]]></description>

         <description><![CDATA[<div><br>Ingredients: <br><br>One large head or two medium size heads of green cabbage from the school garden<br>1 1/2 tablespoons kosher salt<br>1 tablespoon caraway seeds (optional)<br>Cutting board <br>Food processor or chefs knife<br>Mixing bowl<br>2 quart size mason jars<br>Jelly jar filled with marbles or other weights that will fit inside the quart size mason jar<br>Cheesecloth<br>Rubber band to secure the cheesecloth<br><br>Directions: (make sure all utensils, jars and bowl are washed and sanitary)<br><br>1. Pick one large or two medium heads of fresh green cabbage from the school garden, rinse, and throw away the defective leaves<br>2. Cut the cabbage into quarters and remove core<br>3. Cut the cabbage into very thin ribbons or shred the cabbage with a food processor<br>4. Put the shredded cabbage in a bowl and mix with salt for about 5 minutes gently massaging the salt into the cabbage until it becomes limp. Add caraway seeds.<br>5. Stuff the shredded cabbage into a mason jar as tight as possible pour any liquid released by the cabbage into the jar<br>6. Weigh down the cabbage with the smaller jar filled with marbles <br>7. Cover the jar with cheese cloth and secure with rubber band<br>8. Add extra liquid if necessary to keep the cabbage submerged (1 teaspoon salt to 1 cup water).<br>9. Keep cabbage at 68-72 degrees for 3 weeks to ferment.</div>]]></description>

         <description><![CDATA[<div><br>INGREDIENTS</div><ul><li><strong>1 ½</strong> <strong>pounds eggplant (1 large), roasted</strong></li><li><strong>2</strong> <strong>tablespoons olive oil</strong></li><li><strong>1</strong> <strong>medium onion, chopped</strong></li><li><strong>2</strong> <strong>stalks celery, from the inner, tender stalks (the heart), diced</strong></li><li><strong>3</strong> <strong>large garlic cloves, minced</strong></li><li><strong>2</strong> <strong>red bell peppers, diced</strong></li><li> <strong>Salt to taste</strong></li><li><strong>1</strong> <strong>pound ripe tomatoes, preferably romas, peeled, seeded and finely chopped, or 1 14-ounce can crushed tomatoes (in puree)</strong></li><li><strong>3</strong> <strong>heaped tablespoons capers, rinsed and drained</strong></li><li><strong>3</strong> <strong>tablespoons coarsely chopped pitted green olives</strong></li><li><strong>2</strong> <strong>tablespoons plus a pinch of sugar</strong></li><li><strong>3</strong> <strong>tablespoons red or white wine vinegar or sherry vinegar (more to taste)</strong></li><li> <strong>freshly ground pepper to taste</strong></li></ul><div><br></div><div>PREPARATION</div><ol><li>Roast the eggplant, allow to cool and chop coarsely.</li><li>Heat 1 tablespoon of the oil over medium heat in a large, heavy nonstick skillet and add the onion and celery. Cook, stirring, until the onion softens, about 5 minutes, and add the garlic. Cook together for a minute, until the garlic begins to smell fragrant, and add the peppers and 1/2 teaspoon of salt. Cook, stirring, until just about tender, about 8 minutes. Add another tablespoon of oil and the eggplant, and stir together for another 5 minutes, until the vegetables are tender. The eggplant will fall apart, which is fine. Season to taste.</li><li>Add the tomatoes to the pan with about 1/2 teaspoon salt and a pinch of sugar. Cook, stirring and scraping the bottom of the pan often, for 5 to 10 minutes, until the tomatoes have cooked down somewhat and they smell fragrant. Add the capers, olives, remaining sugar, and vinegar. Turn the heat to medium-low and cook, stirring often, for 20 to 30 minutes, until the vegetables are thoroughly tender and the mixture is quite thick, sweet, and fragrant. Season to taste with salt and pepper and remove from the heat. Allow to cool to room temperature. If possible, cover and chill overnight. Serve at room temperature.</li></ol><div><br><br>       <br><br></div>]]></description>

         <description><![CDATA[<div>https://vanillaandbean.com/garlic-scape-pesto/<br><br>Garlic scapes are the flowering part of the garlic plant that are ready to eat early June. I love harvesting scapes with students because they get to eat a flower and it's such a strong, pungent taste! Most of them have never considered garlic other than garlic bread. The pesto is easy to make and goes great with crackers, bread, or pasta.&nbsp;<br><br>-10 garlic scapes<br>-1/3 cup pine nuts<br>-1/3 cup Parmesan Cheese<br>-1/2 lemon juiced<br>-1/8 tsp sea salt<br>-a dash of pepper<br>-1/3 cup olive oil.<br><br>Chop up garlic scapes roughly. Add scapes, pine nuts, cheese, lemon, sea salt, and pepper to food processor. Pulse a few times to break down the mixture. Scrape down the bowl and add in olive oil. Then run the food processor until everything is smooth, about 1-2 minutes. Enjoy with crackers or bread for a taste test or over pasta for something a bit larger. </div>]]></description>

I would have the children pick a variety of fruit and vegetables from the garden to make our friendship salad.&nbsp; We don't have a garden set up at this time but this is something I hope to do&nbsp; in the future with my class when we are able to develop our garden this summer.</div>]]></description>

         <description><![CDATA[<div>Garden Salsa<br><br>Chop a bell pepper, onion, cilantro, and jalapeno peppers into a bowl, size depending on the amount of Salsa you plan to make. Cut until it's chopped small enough that you can still tell what each ingredient is, but mixes well together. Add tomatoes, chop until they are chopped into large chunks, or smaller if you choose. Put the mixture into a bowl with a tight-fitting lid. The amounts of each of these ingredients can change with the tastes of the students. Experiment!!<br>You'll also another bowl make a mixture of olive oil, apple cider vinegar, and lime juice, then add mixture to the vegtables bowl and stir in well. Eat on chips. Let rest for 20 minutes, then drain excess moisture from the cucumbers by gently squeezing the slices and pouring off the liquid.<br>To a medium bowl, add vegan yogurt or sour cream, garlic, sugar, vinegar, dill, salt &amp; black pepper to taste. Stir to combine (you can also blend all ingredients in a mini blender). Taste the dressing and adjust seasonings, adding more salt, pepper, vinegar, etc. to taste.<br>Pour the dressing over the cucumbers. Either kind will work but Jasmine rice is made for this dish.</li></ul><div><br></div><div>Cooking Instructions:</div><div>	</div><div>Cauliflower:</div><ol><li>In a big bowl, stir all of the 4 ingredients together (Flour, Milk, Baking Powder and Garlic Powder) and mix. When it is fully mixed, add your cut up cauliflower. Get it all covered in the mixture.</li><li>Now, get the frying pan all set up with vegetable oil for frying. About 4 cm (1½ inches) of oil, should be enough.</li><li>Place the cauliflower in there and fry each one until golden brown, and place it on a dish that has a paper towel or if you’re green, a rack to let the grease drip off of them.</li></ol><div>Seasoning:</div><ol><li>Get a pan out and place all of the first 6 ingredients into it. Place on a flame and get it to a simmer.</li><li>Once at a simmer, add the Cornstarch Slurry.<ol><li>To make a cornstarch slurry, add 1 tbs. with 1 tbs. lukewarm water. Mix them together and you have your slurry.</li></ol></li><li>Once that simmers for about 1 min. add your fried cauliflower to it. Stir it around.</li><li>Your, General Tsao’s Cauliflower is done!          <description><![CDATA[<div>Ingredients</div><div>5 cups rhubarb (about 3 large stalks, cut into 1⁄2" cubes)</div><div>2 cups hulled and halved strawberries (about 1 pint)</div><div>2 ¼ cups sugar</div><div>1 tablespoon fresh lemon juice (from about half of a large lemon)<br><br></div><div>Combine all ingredients in a medium to large saucepan over medium heat. Once mixture starts to bubble, reduce heat to medium low. You'll want the heat set to the point where it continues to bubble but not violently when stirred (you'll understand once you start cooking if jam bubbles start to pop out of the center of the pot). Continue to cook, stirring occasionally, until the jam has thickened. Plan on cooking jam for about an hour and temperature of the mixture is over 205 degrees F.</div><div>While the jam is cooking, sterilize four 1-cup jelly glass jars plus their rings and lids. I do this by boiling them in water for 10 minutes or I boil the lids and run the rings and glass jars through the dishwasher.</div><div>Transfer sterilized jars, lids, and bands to a clean dish towel.</div><div>Have a very large covered pot of boiling water ready. There needs to be enough water in the pot so that when the filled jars are submerged, they're covered by at least 1" of water.</div><div>Fill each jar with hot jam, leaving at least 1⁄4" of space at the top. Place lids on jars, and secure ring bands. Secure just tight enough so that they are hand tightened but you can easily unscrew.</div><div>Transfer filled jars to pot of gently boiling water and let boil for 10 minutes. Transfer jars, set at least 1" apart, to a dish towel and let cool, undisturbed, for 24 hours. You should hear the seals on the lids pop pretty soon after removing from the water.</div><div>If any jar is not fully sealed, or you chose to skip the canning process, jam should be refrigerated and used within 2 weeks. Stir together the carrots, eggs, applesauce, yogurt , butter, and vanilla in a medium bowl.<br>3. Add in the flour, baking powder, and cinnamon. Stir gently to combine.<br>4. Heat a cast iron pan or griddle over medium heat. Add a sliver of butter and let melt, swirling around pan.<br>5. Cook batter about 1/4 cup at a time and spread thin. Mozzarella Cheese, shredded<br>8 oz.          <description><![CDATA[<div>INGREDIENTS:<br>3 zucchini (cut into one centimeter cubes)<br>5 plum tomatoes (ripe and diced)<br>1 small onion (finely minced)<br>3 garlic cloves (finely minced)<br>1 jalapeno (optional for flavor)<br>1 cups corn<br>small bundle of epazote (finely chopped)<br>1 tsp salt ( or to taste)<br>1 tbsp. olive oil<br><br>Add the oil into a medium pot and fry the onion over medium heat for about 2-3 min, add the garlic, after another min add the tomatoes, jalapeno (optional) and a pinch of salt and mix. Let it cook for 5 more minutes over medium heat and add the zucchini, corn, epazote and the rest of salt, mix well and cover pot letting cook for 20 more minutes over medium low heat. After the 20 minutes turn heat off, at this point the zucchini is cooked al dente, mix one more time, place lid on and let simmer for another 10 minutes or until soft to your liking.<br><br>Serve hot, topped with queso fresco (optional) and sour cream (optional) <br>May add a side of rice (optional).<br><br>Recipe is in Spanish but I translated it as much as I could.          <description><![CDATA[<div>Ingredients:<br>6 med. to large green tomatoes<br>3/4 C. all purpose flour<br>3/4 C. cornmeal<br>2 eggs<br>pinch of cayenne pepper<br>1/2 tsp. salt<br>1/2 tsp. pepper<br>1 TBSP butter<br>canola or vegetable oil<br><br>Directions:<br>Wash and cut tomatoes into 1/2 in. slices.&nbsp; Lightly salt both sides and leave on a rack or towel for 15 min. to draw out some of the extra water in the tomatoes.&nbsp; Pat dry.<br>Whisk eggs in a bowl for dipping.&nbsp; Combine flour, cornmeal, salt, pepper and cayenne in a shallow dish.&nbsp; Dredge tomato slices in flour mix, then dip in egg, then dredge again in the flour mixture.<br>Fill a skillet 1/2' full with oil and heat on med. high, adding butter to the oil.<br>Add tomato slices to the heated oil, browning on both sides. (Approx. 3 min.)&nbsp; Remove and place on paper towel to drain excess oil.<br><br>Serve as is or dip in ranch, marinara, honey mustard or sweet chili sauce.  The dipping sauce could be one that is prepped from garden ingredients as well.  The tomatoes are best when served hot.  Enjoy!<br><br><br></div>]]></description>

         <description><![CDATA[<div><strong>Ingredients</strong>:&nbsp; About 5 dozen fingerlings per class of 24 students.&nbsp; <br>Olive oil salt or garlic salt sprinkle.&nbsp; (Note:&nbsp; we cooked up a bunch and did cafeteria room optional tastings to introduce our home grown heirloom Makah&nbsp; Ozette fingerlings that Bridlemile Elementary received from Farmer Jo to Bridlemile Elementary--kids gobbled them up!&nbsp; Google the history of these heirlooms--a great lesson for 2nd grade on up.)<br><br><strong>Preparations</strong>:<br>(We plant, harvest, wash and cook heirloom fingerlings at school.) &nbsp;</div><ol><li>Thoroughly soak/wash/scrub, as needed, to remove soil; remove any potatoes that have "greened" to use as next planting crop. &nbsp;</li><li>Lay out to dry on cloth or paper towels; pat dry.</li><li>DO NOT cut into smaller pieces, unless larger than a good 3 inches in length.</li><li>Place dried off fingerlings into a large bowl.</li><li>Sprinkle 3 tsp.olive olive oil to coat potatoes while mixing with large spoon..</li><li>Continue mixing while sprinkling 1/2 tsp. salt or garlic salt.</li><li>Lay out on parchment paper (optional) in rimmed baking sheets &nbsp; (drizzle onto the single layer of potatoes any extra oil from the bottom of bowl, or add a bit more; could use olive oil spray.)</li><li>Optional:&nbsp; add an additional&nbsp; overall sprinkle of salt onto single layer of potatoes.</li><li>Bake in preheated 350 degree oven for 18-20 minutes--can do several trays.</li><li>Serve warm, as is.&nbsp; YUM!&nbsp; (can be slightly oily finger food, or eaten with fork)</li></ol><div><br></div>]]></description>

It's such a great way to get kids to try something they may never have come across before.<br><br><strong>Ingredients:&nbsp;<br>-</strong>Kohlrabi<br>-Sesame oil<br>-Salt<br><br><strong>Prep:<br></strong>1. There are many versions of this on Pinterest..<br><br>Produce<br>1 small head Broccoli, small cut<br>2 tbsp Dill weed<br>1 English cucumber<br>3/4 cup Match stick or shredded carrots<br>1 Red bell pepper<br>1 Yellow bell pepper<br><br>Baking &amp; Spices<br>1 Envelop of dry ranch salad dressing mix<br><br>Bread &amp; Baked Goods<br>2 tubes Refrigerator crescent rolls<br><br>Dairy<br>1 8- ounce package Cream cheese<br>1/3 cup Sour cream<br><strong><br>Instructions</strong></div><ul><li>Preheat the oven to 350° as directed on the crescent roll package instructions.</li><li>Dice all of the vegetables.</li><li>Spread crescent rolls across the cookie sheet so that cover the entire cookie sheet.</li><li>Using your fingers pinch the perforations on the crescent rolls to seal them together.&nbsp;</li><li>Bake according to crescent roll package instructions.</li><li>Cool completely before adding toppings (you can also cool it and lightly cover it with a paper towel or plastic wrap and leave on the countertop overnight).</li><li>In a medium-sized bowl, add softened cream cheese, sour cream, ranch dip, and dill; stir until fully mixed.</li></ul><div><strong><br>To assemble the pizza:</strong></div><ul><li>Spread the ranch dill dip all over the baked and cooled crescent roll pizza base.</li><li>Add chopped mixed veggies in this order, broccoli, cucumber, yellow bell peppers, red bell peppers, carrots.</li><li>Cut into equal squares and serve.</li></ul>]]></description>

Corn will have to be cooked before combining with other ingredients.&nbsp; They can also pick fresh cilantro and squeeze the fresh line.<br>Children can combine all ingredients to make the salad.<br>Refrigerate before serving.          <description><![CDATA[<div>This is a very simple and quick way to cook chard, which seems to be a bit of a mystery veg to some!  I love to grow it in our school gardens and my home garden, though we do have to fight the miner worms.  Fly paper helps, along with vigilant wiping off of the little white eggs on the backs of leaves.  My favorite is rainbow chard, but it's all pretty and yummy!<br><br>Ingredients: Chard, Olive Oil, Seasoned Rice Vinegar<br><br>- Wash, trim, and chop chard (stems included!)<br>- Heat a large skillet over high heat<br>- Add just a bit of oil - less than one tablespoon should do the trick<br>- Add chard and cook over high heat, stirring frequently, until leaves are completely wilted and stems start to soften - about 3 minutes<br>- Add a slash of vinegar, to taste, and cook for a half minute more (my "measure" is a fast "zig zag zig zag" across the skillet)<br>- Serve and eat while hot! &nbsp;<br><br>I have one kiddo who likes and will eat this, and another who's tried it and claims she really doesn't like it.&nbsp; Perfect for nights when we have one serving of leftover broccoli that none of the rest of us want to eat!</div>]]></description>

         <description><![CDATA[<div>Last fall we enjoyed pickling our cucumbers and then having them for our hamburger, turkey burger, and vegan burgers for our school lunches!&nbsp;<br><br>We really let the kids play around with the ingredients:&nbsp;<br>Cucumbers from school garden<br>Dill from school garden&nbsp;<br>Salt and Pepper&nbsp; and Sugar to taste&nbsp;<br>3/4 Vinegar and 1/4 water - to fill container (cottage/yogurt type container)<br><br>We would let the kids slice the cucumbers and add them and the dill as they wanted to the containers.&nbsp;<br>We would measure out small amounts (1 - 2 teaspoons at a time) of salt and pepper&nbsp; and sugar and let children experiment with the amounts.&nbsp;<br><br>We would usually make these a few days ahead of burger days so they were ready to go!</div>]]></description>

This recipe is from https://www.wellplated.com/cabbage-steaks/ which also has a million suggested variations, many of which I have tried and are very good. :)&nbsp;<br><br></div><ul><li>1 small head green cabbage <em>any dark, loose leaves removed</em></li><li>1/4 cup <a href="https://amzn.to/34bAz5D">extra virgin olive oil</a></li><li>2 cloves garlic <em>minced</em></li><li>1 teaspoon kosher salt</li><li>¼ teaspoon ground black pepper</li><li>1/3 cup raw pecan halves or walnut halves <em>optional</em></li><li>1 small lemon <em>halved (optional but very good)</em></li><li>For serving: grated Parmesan (highly recommended) <em>chopped fresh herbs, such as thyme or parsley (optional)</em></li></ul><div><strong>Instructions&nbsp;</strong></div><ul><li>Preheat oven to 400 degrees F. Generously coat a rimmed baking sheet with nonstick spray and set aside.</li><li>Cut off the bottom (root) end of the cabbage and place it on a cutting board sitting up so that the flat end is on the cutting board. Cut top to bottom into 3/4- to 1-inch thick slices. Place on the prepared baking sheet. If you have more slices than fit on your baking sheet without touching, divide them between two baking sheets.</li><li>In a small bowl, whisk together the olive oil, garlic, salt, and pepper. Brush over one side of the cabbage, then flip the cabbage over and brush the other side. Roast the cabbage for 26 to 28 minutes, or until crispy at the edges and tender in the center. (If you are using one pan, roast it on the center rack; if two, use the the upper and lower-third racks.) Halfway through the baking time, rotate the pan(s) 180 degrees; if you are using two pans, switch their positions on the upper and lower racks at this point too. No need to flip the cabbage over. Don’t worry about any extra crispy, dark leaves around the very outsides; they’ll taste incredible.</li><li>While the cabbage bakes, toast the pecans in the oven at the same time: spread the pecans onto a small, ungreased baking sheet. Toast them in the oven with the cabbage until fragrant and the center of a pecan is light tan when broken in half, about 8 minutes, tossing them once halfway through. DO NOT WALK AWAY during the last several minutes of baking. Nuts love to burn the second you do. Remove the pecans from the oven and transfer immediately to a cutting board (if you leave them on the hot pan and they are super toasted already, they may burn). Let cool, then roughly chop.</li><li>Sprinkle the roasted cabbage with Parmesan and fresh herbs. Squeeze the lemon over the top, then finish with the chopped pecans. In a 10-inch skillet heat 1 tablespoon oil over medium high. Sauté onion and parsley to golden, then stir in garlic and oregano for a few seconds. Spread sauce over rolled out crust, sprinkle with basil, mozzarella, and finally the oil. Finish with generous black pepper and a little salt. Bake as directed above.<br><br></div><div>Variation: In Naples, fresh or canned tomatoes often replace tomato sauce on pizza. Make sure tomatoes have big, rich flavor and use them judiciously.<br><br></div><div>More Variations: Sparingly is the operative word here. Use any of the following flavorings, but only enough to flavor, not overwhelm: Sliced red onion, pitted olives, pepperoni, anchovy, sliced mushrooms, steamed broccoli or cauliflower, salami, prosciutto, roasted peppers, shrimp, cooked Italian sausage, hot pepper, fresh herbs such as marjoram, oregano, mint, garlic, rosemary, or sage. Step from Italian to American pizza and let your imagination fly -- Tandoori marinated chicken breasts, oven roasted vegetables, salsa, the BLT, and more.</div><div>&nbsp;</div><div><em>Assembling the Pizza</em></div><div>&nbsp;</div><div>To make pizza, lightly oil a 14- to 16-inch pizza pan. Preheat oven to 500 degrees, setting rack as low as possible in oven. Roll out dough as thin as possible to about a 16-inch round (no more than 1/16-inch thick). Spread over pan, rolling in edges to form a rim. Let rest 10 minutes. Top as desired or suggested below and bake 10 minutes. Then using a spatula and thick oven mitt, slip the pizza off the pan directly onto the oven rack by pulling out rack, grasping pizza pan firmly with protected hand, and using spatula or pancake turner to slip pie off pan and onto rack. Olive Oil      Salt and Pepper	    Chop the vegetables.     Vegetables that take longer to cook (like potatoes) should be in smaller pieces.       Root vegetable like beets, potatoes &amp; carrots will take 30- 45 minutes, Winter Squash like butternut or acorn squash will take 20-60 minutes, Crucifers like broccoli, cauliflower or Brussels sprouts will take 15-25 minutes, soft vegetables like bell peppers, summer or zucchini squash will take 10-20 minutes, thin vegetables like asparagus or green beans will take 10-20 minutes, onions will take 30-45 minutes, and tomatoes will take 15-20 minutes to cook.	Toss with olive oil and seasoning in a large bowl. Spread evenly on a rimmed baking sheet.      Roast for 25 minutes or longer depending upon the veggies, stirring halfway through, or until desired doneness.      Once you are comfortable roasting your veggies, it’s easy and fun to experiment with different flavors.      Try lemon, balsamic vinegar, mint, garlic, seasoning mixes, Italian herbs, rosemary, and favorite seasoning blends like Mrs. Dash. </title>

         <description><![CDATA[<div>3 yellow or red onions<br>12 Roma tomatoes<br>2 cups fresh cilantro leaves<br>2 to 3 jalapenos<br>1 lime<br>salt&nbsp;<br>Directions:&nbsp;<br>1. Dice up equal quantities of onion and tomato. Roughly chop the cilantro.<br>2. Now, slice 1 or 2 jalapenos in half. With a spoon, scrape out the seeds.&nbsp;<br>Dice the jalapenos very finely, you want a hint of heat and jalapeno flavor, but you don't want to cause any fires. Now dump the four ingredients into a bowl.<br>3. Slice the lime in half and squeeze the juice from half a lime into the bowl. Sprinkle with salt, and stir together until combined. Be sure to taste the pico de gallo and adjust the seasonings, adding salt or more diced jalapenos if needed.</div>]]></description>

         <description><![CDATA[<div>Ingredients<br>7 c thinly sliced cucumbers<br>1 c thinly sliced onions, chopped into smaller pieces if desired<br>1 c diced green bell pepper<br>1 T pickling salt<br>2 c sugar<br>1 c white vinegar<br>1 T celery seed<br>big spring of fresh dill<br><br>Directions<br>1. Combine cucumbers, onions, bell peppers, and pickling salt in large heatproof bowl, preferably one with a lid. Stir and let sit on the counter for 1 hour.&nbsp; Drain.&nbsp;<br>2. In a medium saucepan over medium high heat, heat the sugar, vinegar and celery seed.  Stir occasionally.  When the sugar has completely melted, pour the hot mixture over the cucumbers.  Add the dill.  Let cool to room temperature.  Place a lid on the bowl and refrigerate for 2 days before eating.  Eat straight from the bowl or transfer to jars if desired.  You could also transfer the room temperature mixture to jars before refrigerating for 2 days.  Pickles keep well for a few weeks.<br><br></div>]]></description>

         <title>Mint Tea </title>

         <description><![CDATA[<div>When in the garden, students enjoy picking mint leaves, rubbing them between their fingers, smelling them and even tasting them. Mint is prolific, so we always have plenty. We harvest the leaves, put it in a glass container, pour hot water over it and watch the water change colors. I add a touch of honey to add to the sweetness and let the students try it. It is simple, but an excellent lesson. While they are sipping their tea I tell them a story about my grandmother. She always made mint tea for me when I was a child with a tummy ache. This will always be a simple favorite recipe for me! As an extension of the lesson, we pick the leaves and dehydrate them on trays. Afterwards I show them how to make the same tea from the dried leaves. We talk about food preservation.          <description><![CDATA[<div>One of my favorite garden/kitchen projects with children is making cornbread. We grew dent corn, picked it, and dried it. Then we husked it and removed the kernels. Then children had the opportunity to try grinding it in a small stone mill. Then, in the kitchen, I ground the rest of it with a vita mix (much faster than stone mill!) and used the ground cornmeal to make cornbread for the preschool classes. We used multi-colored corn which gave our cornbread a beautiful speckled look. Yum yum!<br><br><br></div>]]></description>

It holds it’s own without meat)</li></ul><div>DIRECTIONS:</div><ol><li>Over medium heat saute the onion, zucchini, parsley, and basil in butter until vegetables are tender.</li><li>Stir in flour, salt and pepper. Gradually stir in vegetable broth. Add lemon juice; mix well. Bring to a boil; cook and stir for two minutes.</li><li>Add tomatoes, milk, and corn; bring to a boil. Our favorite variety is Cherokee Long-Eared Popcorn, which has lovely multi-colored kernels. After the ears are harvested and dried, students can take the kernels off. We usually use an electric popcorn maker since we don't have access to burners. This year, while we are waiting for the popcorn to pop, I plan to talk about the Cherokee Nation and the tradition of seedkeeping that keeps varieties like this alive and well each year.
