Although Vanillin is found naturally as the main extract from the Vanilla bean, it is so popular around the world that one source states that "85% of it is synthesized from petrochemical precursors" (Gomollón-Bel, 2022)

What is it?

As you may have guessed, Vanillin is Vanilla's main flavour and contains three functional groups: alcohol, aldehyde, and ether. It is a white crystalline solid with a melting point of 81–83 ºC (MotW September 13, 2016)

Vanillin is a member of the class of benzaldehydes carrying methoxy and hydroxy substituents at positions 3 and 4 respectively.

It has a role as a plant metabolite, an anti-inflammatory agent, a flavouring agent, an antioxidant and an anticonvulsant.

It is a member of phenols, a monomethoxybenzene and a member of benzaldehydes
