El Bollo is one of the several typical dishes of the Gastronomy of Ecuador that emerged with the mixture of coastal cultures. It is a wrap of green or banana dough with fish, such as Albacore, Bonito and wahoo, it has ground peanuts and is wrapped with banana leaves.12

The bun comes from Manabí, but not from Esmeraldas, while other writings indicate that its origin is Guayaquil. However, there are more versions about the roots of the green bun. In Montubio venues such as Salitre, General Vernaza, La Victoria, Junquillal and others, the creation of the snack is awarded. In the restaurants of these towns, the bun prepared with freshwater fish such as Bocachico is part of the best of their menus.
DIEGO IGNACIO DEMERA BORBOR
DE 9 A

The ingredients that identify the casserole, a delicious traditional recipe from the Ecuadorian coast, are bananas, accompanied peanuts and fresh fish.

Albacore is the most recommended species to use. To prepare this dish, you must first grate the plantains, then soften the dough and in a pan, fry the achiote, onion, oregano, basil and garlic together. Immediately, the raw plantain mass is mixed with the peanuts dissolved in water and the fish or shellfish consommé, depending on preference; add salt, cilantro and pepper, mix with the refried food in a large clay pot and add the fish along with the rest of the seafood of your choice. Then the preparation is taken to the oven for 20 minutes and when it is ready, it is placed in small pots to serve.

This recipe can be accompanied with a portion of rice, chips and a cup of coffee.

the guatita is one of my favorite dishes and ingredients include peanuts, salt and pepper to taste, lemon juice, milk tripe, cilantro, oregano and potatoes
and it is prepared in this way:
Cover the tripe with water, salt and half of the lemon juice, let it rest for 10 minutes, wash it and repeat the process again. Wash it well the second time.

In a large pot, put the washed tripe with the coriander sprigs, the garlic, the salt and the cumin. Bring to a boil, reduce heat, and simmer until tripe has softened, about 2 hours.

Meanwhile dilute the peanut butter with ½ cup of milk.

When the tripe has cooled, chop it into very small pieces.

Prepare a refried or sofrito with the butter, achiote, cumin, salt, oregano, onion, pepper, tomato and garlic, cook over medium heat until the onions are soft and almost transparent, about 5 minutes.

Put the refrito, milk and peanut butter in the blender and blend until you get a creamy sauce.
Put the refrito, milk and peanut butter in the blender and blend until you get a creamy sauce.

Put the liquefied sauce, the 2 cups of tripe broth, the chopped potatoes and the chopped tripe in a large pot, bring to a boil, reduce the temperature and simmer until the potatoes are soft and the liquid begins to thicken .

Crush the potatoes a bit to thicken the sauce, taste and adjust the salt.

Add salt and pepper to taste.

Serve the guatita with rice, pickled onions, tomato slices, avocado, and a good chili.

The guatita is a traditional dish of the city whose consumption became popular in the 40s of the last century and has varied in terms of preparation and tastes. In Guayaquil, most restaurants have it on their menu.

Name: DANIELA ALEJANDRA MENDOZA BOZADA

Hi, I'm Rosa Basurto 9 "C"
My favorite food is cordon bleu.
The cordon bleu was a blue ribbon that served as distinction and was worn by the best cooks. That blue ribbon or 'cordon bleu' was also used to refer to those chefs who surprised a monarchy very accustomed to succulent banquets in the palace with their high level.
Chicken cordon bleu is a recipe for chicken breast rolled up and stuffed with cheese and ham. It is very easy to make and it is delicious. We will only need a small handful of ingredients, all on hand and cheap to get. As a result, we will obtain a truly delicious appetizer (or second course). To make a chicken cordon bleu, you will only need:
2 chicken breasts cut into fillets
8 slices of cheese sandwich
8 slices of york ham
breadcrumbs, flour and 2 eggs
salt and pepper
Oil

Hi, I'm Jamilet S. and I really like the ball, which is very typical of the coastal region.

Ingredients
4 green bananas peeled and cut into medium pieces
4-5 tablespoons of butter or lard
2 tablespoons canola or sunflower oil
1 tablespoon hot pepper or ground chili
1 tablespoon ground cumin
1 cup shredded or grated cheese or 1 cup cooked chorizo or pork rinds and/or ground peanuts
Salt to taste

Preparation
Add the plantain pieces and cook over medium low heat for about 30-40 minutes or until very soft, turning every 10 minutes. They should be slightly browned, but not crisp.
Sprinkle the cooked plantain pieces with chili powder or ground chili, cumin, and salt to taste.
Put the hot plantain pieces in a large bowl.
Mash the bananas until you get a thick dough.
Form small balls with the dough, the size should be a little smaller than a tennis ball.
Make a hole in the center of each ball and fill it with the cheese (or chorizo or pork rinds). Gently press down on the filling, cover and form back into a ball.
The bolon de verde can be served this way directly. If you prefer it slightly crispy on the outside and piping hot, you can follow the remaining steps.
Heat the oil over high heat, add the stuffed plantain balls and fry until golden brown and crisp on both sides.

Put the fried bolones on a plate covered with absorbent paper to drain the fat and serve immediately accompanied by coffee and a fried egg

hello, I am from the province of Guayas I will write a little about my favorite typical food that as you can see is the dry chicken.
The name seco comes from the Peninsula of Santa Elena in Ecuador, where at the beginning of the twentieth century an English camp did oil work in Ancón, when referring to the second course of the meal, in English "second", the Ecuadorians repeated deforming the word until reaching the current "dry"
INGREDIENTS
4 legs with thigh (they can separate them)
1 breast with bone cut into 4
1 1/2 red onion
2 1/2 large tomatoes
1 large green pepper
2 garlic cloves (without the central bud)
5 sprigs of coriander (stem + leaves)
1 naranjilla (juice)
1/2 tz water
3 tsps of colored chili pepper or 2 tbsp of oil with achiote The colored chili or the achiotado oil provide color.
2 tbsp sunflower or corn oil
Salt to taste
1/2 tsp cumin
1/2 tsp pepper
1 sprig more coriander for cooking
PREPARATION
1. Clean excess fat from chicken prey leaving the skin. Add salt, cumin and pepper and brown them in batches in a little oil
2.Liquefy: onion, tomatoes, pepper, garlic, coriander, colored chili, salt, pepper with water
3.Pour this mixture over the chicken, cook for a few minutes and also add the naranjilla juice. Let it boil gently and put a branch of coriander, this is the secret of taste. After about 15 minutes they try and if necessary add a little more salt. They let it boil over low heat semi covered until the chicken is done, taking care that it does not detach much from the bone, in 35-40 minutes
4.It is served very hot accompanied by yellow rice (cooked with achiote oil) and fried ripes

NAME: GARCÍA OLIVO GADIEL ALEXIS
COURSE: 9no" E"
DATE: 04/02/2022

Fish with onions is a typical Ecuadorian soup, from the coastal region, this delicious recipe is prepared with albacore or fresh tuna, yucca, onion, tomato, cilantro and is served with a good portion of onion and pickled tomato on top of the soup.In some places they also serve it with garnishes such as chifles, canguil, toasted corn, spicy sauce to taste, fish onions or tuna onions. It is one of my favorite soups. It has a delicious flavor, it is spicy and refreshing at the same time, but the preparation is very simple and easy. Onions can be eaten for breakfast, lunch, or dinner. Like some other typical Ecuadorian dishes, it is perfect for chuchaqui or a hangover.
