Page two is about phase changes. Phase changes occur when matter moves to a more active state. An example of a phase change is if the energy from a stove heats up liquid water and creates steam(gas). Elements and compounds can move from one phase to another when specific physical conditions change.

When you add a hot temperature to a solid like turkey it could have a chemical reaction and release grease/fat which is liquid and when the liquid heats up even more it turns into gas and that's what you smell. When you make steam or water vapor colder it turns to liquid that's why your hands get wet over a pot, it cools on your hand and when you freeze the water from the steam it turns into ice.

Adding energy can create a phase change in matter. No matter what physical state it is in, it will always stay the same. It always has the same chemical properties. A chemical change would build or break the chemical bonds in the water molecules. Generally, changes in the physical state do not lead to any chemical changes in molecules.
