Shakespeare may portray them in this way because it is easier to see things in the extreme. So in order to emphasize how quickly they fell in love and to make it more apparent, they fall in love instantly. This is probably because the play doesn't take too long so if they fell in love through the entire play it isn't as apparent that it happened quickly. Miranda probably fell in love this quickly because she was ignorant of other people at first and didn't have much to compare him to. While Ferdinand was emotionally in turmoil thinking his father was dead.
