         <title>Dumpling Wrappers</title>

         <description><![CDATA[<p>I can't find the recipe I used - I got one off line. I can remember it, though. It was:</p><p>3 cups all-purpose flour</p><p>1 t salt</p><p>1 cup boiling (or very hot) water</p><p><br/></p><p>Mix the salt and flour in a large bowl. Trickle in the water and combine together with chopsticks until the dough is cool enough to knead. Need until i's a smooth ball. It should not be sticky - add flour to be able to work it, but not too. much flour or the wrappers will be hard to roll out and shape.</p><p><br/></p><p>After making the dough, rest for at least 15 minutes. The dough can rest in the refrigerator overnight.</p><p><br/></p><p>When ready to use, you can roll out the dough into a big sheet and cut circles, or you can roll the dough into a snake and then cut the snake into walnut-sized bits (poor snake). Then roll each piece into a ball and then roll out into thin circles. </p>]]></description>

         <title>Dumpling Filling</title>

         <description><![CDATA[<p>There are many recipes online for dumpling fillings. I made one up as follows:</p><p><br/></p><p>Chop up part of a cabbage, an onion, and mushrooms. Saute  in a wok or skillet to soften and then add soy sauce, sesame oil, chili oil, rice vinegar, and Chinese Five Spice to taste. Stir in a packet of Impossible or Byond Burger  and mix. Once most of the liquid has evaporated,  scoop the veggies out of the walk and leave any remaining the liquid behind. </p><p><br/></p><p>Put the veggie mix into a food processor and pulse to make the filling chopped up, but not mush. You can also chop by hand if you wish. </p><p><br/></p><p>Taste and add seasonings to taste (soy, sesame, etc.)</p><p><br/></p><p>Roll out dupling wrappers and fold up as desired.</p><p><br/></p><p>Dumplings can be steamed, steam-pan-fried, or fried. </p><p><br/></p><p>Chop veggies in </p>]]></description>

         <title>Final Projects Coming After Break</title>

         <description><![CDATA[<p>Following February break, students will all do a final project for the History of Food course. Students will have a wide berth of topic choices, including picking a particular food to research, to finding recipes, to furthering studies on aquaponics, food insecurity, or something else we have studied. Each student's project will have:</p><p>-a written component</p><p>-a connection to science</p><p>-a connection to the environment</p><p>-an action component (teaching a class, making a video, writing an advocacy letter, etc.)</p><p><br></p><p>Students may be able to work in pairs or small groups as long as they can identify individual tasks. Each will be required to do a writing component. </p><p><br></p><p>Clear project directions will be given out on Tuesday/Wednesday following break and students will have two weeks to complete their projects. Although I do not normally give homework other than reading, if students choose to do cooking, this may need to happen at home. </p>]]></description>

         <description><![CDATA[<p>This video is a pasta-making demonstration by an Italian woman who is over 100. Possible connections to a final project:</p><p>-Pasta dishes around the world - how do different cultures use pasta?  (Would include geography and how it affects food choices, globalization impacts on food, nutrition facts of pasta)</p><p>-Another approach to pasta could be testing how making pasta is affected by choosing different ingredients? Can a standard egg noodle pasta be made vegan style? Gluten free? Students would do a foodprint (carbon emmissions) on their ingredients, compare different wheat, and find the history of either the pasta, the wheat variety, or other. </p>]]></description>

         <title>Beyond Bakesales: How to help fight food insecurity?</title>

         <description><![CDATA[<p>In the previous weeks we learned about food insecurity and how some organizations work to help. This included going to Winter Walk, a food pantry, Friday Cafe, and stocking the free fridges. While we saw that charity was needed, it is also clear that charity is not a long-term solution. Students spent time learning about different approches to solving food insecurity. We all learned about Soul Fire Farm, started by an African American couple in order to grow fresh vegetables for people who cannot otherwise easily access them. They also bring students to learn about farming, have a space for people to meet to tackle ineuqity issues, and are advocates for food justice. </p><p><br/></p><p>Students then selected other topics to learn about food justice and kept adding to the definition of what food justice means. This padlet shows what some of their take aways were in studying a variety of topics including indigenous farming practices, farm to table restaurants, aquaponics, vertical farming, unfair practices in the production of chocolate and companies / organizations that are have fair trade for chocolate.  </p>]]></description>

         <description><![CDATA[<p>The co-founder of Soul Fire Farm used the terms "food apartheid" and "food justice" in describing inequities in the way people can access nutritious foods. Students unpacked what they thought the term "food justice" meant, then they researched different topics, then came back again to define it. This was difficult for some and so we shared answers and then tried again to come up with a working definition. Some of this work is displayed on the PDF here (click on the image to see it).   </p>]]></description>
