In a 2-cup meter, mash the ripe banana with a fork. Add the egg, then enough milk or soy milk to reach the 1 cup line. Beat the mixture until well combined.
In a large bowl, sift the flour, baking powder, and nutmeg. Add the banana mixture, melted butter or oil, sliced banana and raisins.
Lightly coat a wide skillet with butter or oil, using a paper towel to spread. Heat over medium heat. Test the heat of the pan by spraying a little water on it - the water should jump up and evaporate immediately. Drop ¼ of the batter for each pancake onto the pan. Don't prepare too many at once.
When bubbles appear on the surface of the pancakes, flip until golden. Serve immediately with chopped roasted nuts, maple syrup, and butter.
