At first taste, my mouth was encompassed by the sweet savoury yet mildly herbal taste of the dish. The meat cut in thick slices was tender and juicy. As the meat was smothered with sauce, the sauce's savoury sweet herbal flavours dominate, with the subtle natural gaminess of the meat underlying. The slices of meat have an underlying gaminess and a robust, buttery flavour due to some pieces with a layer of fatty skin. The aromatic rice, despite being drenched in sauce, was neither sticky nor mushy. A piping hot bowl of dark-coloured broth comes with the set. It has a mild, well-balanced savoury-sweet taste accentuated by special herbs. The chilli sauce on the side was also a great accompaniment to the dish. The chilli had a delightful acidic tang, as well as a strong hit of garlic. Tirelessly prepared by having the meat braised for hours, the delectable taste of this dish makes it all worth it.

Braised duck rice. :)

What hits my senses immediately is the thick aroma of spices and cooconut accompanied with the fragrant smell of fried shrimps. The best part to the dish is the soup, it is the deciding factor to a mediocre and excellent dish. The first thing I always try is the rich, spicy and milky broth that envelopes my mouth with its savouriness. I love a bowl of soup that has a smooth consistency, allowing it to glide down my throat, leaving a warm sensation. The dish is usually ate with a round, smooth noodle that complements the consistency of the soup. Prawns, fishcake, cockle and taupok( a thin cream-coloured sheet of bean curd) are other components to the dish that enhances the flavour and experience of eating the spicy dish. My favourite ingredient, however, is not the sought after seafood, but the simple taupok. I like that it is able to absorb the soup so that when I place it in my mouth, hot, delicious broth bursts out and engulfs my mouth. The dish is usually presented with a dash of finely cut up coriander leaves and a small scoop of sambal which further adds on to the flavour and and richness of this dish. Though this dish is said to belong to Singapore, Malaysia and some other South East Asian coutries with Peranakan influence, I believe that Singapore is one of the best in cooking this dish, if not the best, because Singapore knows how important this dish is to our local food heritage, thus, chefs in Singapore have perfected it while ensuring that its traditional flavours are maintained.

Traditionally wrapped with a banana leaf, it is barbecued over a flaming hot grill. It is generously smothered with sambal, made with a dried shrimp paste, spices that will tingle your tastebuds, shallots and walnuts to give a crunch. Lastly, lime is squeezed all over the dish to enhance the taste of this succulent dish i call my favourite. The wonderful sight of this dark red dish can make you hypnotised by its beauty.

In a developed and bustling country like Singapore, one rarely has time to slow down and appreciate the little things in life. However, this eye-catching food with a kaleidoscope of colors in most hawker centres will surely attract people from all ways of life, connecting them with the red strings of fate, or more accurately nostalgia. This seemingly insignificant food is able to perform such an ordinary miracle, due to its unique appearance. Having a body that is made out of layers after layers of colours will certainly lure unsuspecting and curious children to it. I was one of those children, entranced by its mysterious and ominous colours. When my grandfather bought it for me for the first time when i was 4 years old. i was reluctant to take the first bite, as it did not look like any food i had seen before, and it subsequently does not have an aroma, making question its edibility. As i held it in my hands, watching it wobble like pudding, yet stick to my hands like glue, put the food to my mouth, took a deep breath, closed my eyes, and prepared my taste buds and sunk my teeth into it. I was surprised at how soft it was, and how it was wrapping around my teeth, eagerly wanting me to sink my teeth into it deeper and deeper. The chunk i bit off fell onto my tongue, and there it was, i finally tasted it. It was a mixture of 2 distinct flavours, very sweet coconut and pandan. The 2 flavours swirled around my tongue, fully encasing it with a layer of sweetness. Without a second of hesitation, i wolfed down on the rest of the food, devouring it within seconds, as though it would run away like a prey running from its predator. Upon realising i had finished it, i yearned of more, my tongue twisting around in my mouth, attempting to comb out any leftovers of the food stuck on the teeth, only to find none. Feeling determined to have more, i requested for my grandfather to buy this sweet delight for me every time he visits me, and so began my weekly quota of having this food. This food was not particularly delicious, nor was fulfilling, its taste may even be anti-climatic for its colourful appearance. However, to me, this simple hawker food is what i find solace in, indulging my self in this treat to reward my days of hard work while reminiscing about the past, that's what makes it my favourite hawker food

-Rainbow kueh lapis

Looking at it from afar already makes your mouth water and your heart to long for it. Garnished with greens of parsley, crispy lettuce, and perfectly-sliced cooling cucumbers, together with reds of freshly-cut juicy tomatoes and fiery chilli sauce, the plate is just bursting with colour. Not to mention, they are being accompanied with a side of long, crispy fries that are hot and fresh out of the deep-fryer, giving it its beautiful golden colour. Sink your teeth into them with a crunch, and enjoy its salty taste. In the centre, a boneless and charred chicken meat fresh off the grill, with skin so tender, awaits you. Sizzling and piping hot, knife your way through its succulent and juicy meat as its smoky and delicious aroma wafts in, and tickles your nose buds. As you chow down on its greasy and chewy, yet perfectly-seasoned meat, its juice seeps out, allowing the briny and scrumptious flavour to erupt in your mouth, leaving you wanting for more. Its taste will be ingrained into your memory for a long time coming, teasing you to quickly get a chance to devour it all over again.

- Chicken Chop

As soon as I unwrapped the package, the aroma of savoury sauces and prawn wafted into my nose. I took in a deep breath of the freshly cooked noodles and I was ready to devour them all. I grabbed my chopsticks and spreaded the dollop of chilli sauce around. The red chilli swirled around with the noodles and turned them into a slightly spicy shade of orange, it was almost like a captivating dance that you can’t peel your eyes away from. I pulled the noodles and ate the mouthful with a single slurp. The sauces were a perfect blend of rich salty and spicy flavours. I chewed on the soft, springy noodles before chowing down on the next batch of noodles. Alongside with the noodles, I took a bite of the soft and juicy meat of the prawns. The strands of noodles and prawns were a compatible couple, as the chemistry between them made my taste buds elated. Not long after, all of the noodles in front of me disappeared from the face of earth.

Food: Hokkien Mee

It is a sight for sore eyes any day. A nectarous, thirst-quenching concoction that can fulfill my cravings for something cold every time i go to the hawker centre. This wacky dish contains a hidden prize at the bottom, similar to a pot of gold at the end of a rainbow. Bright pink, green, electric yellow and brown are typical colours on this sweet, frozen fluffy dessert. As I indulge in it, a crunch with the coldness sends a shiver down my spine, but as it melts away, my mouth would only be left with a coating of a sugary liquid that spurs me to have another scoop. As this cycle repeats, what i would be left with is sweet, chewy jelly squares and soft red beans in a bowl with a questionable colour of liquid. However, consuming this is a race against time as you have to eat it before the Singapore heat does.

-Ice Kacang (redo)

If you talk about Singaporean hawker food being palatable enough to be recognised by UNESCO, only one dish will come to mind. Just think of the delectable gravy's synergy with the thick noodles in your mouth. The thickness of the noodles, enhancing the umami in the gravy. The ever so slight hint of sambal, making sure you don't get tired of the flavor. The rich smell of fish eminating from the food itself, the culprit behind your drooling. Altogether combined, before you know it, you're already spreading the holy words of how it is the most delicious dish you've had to taste.

My favourite hawker food, firstly consists of springy bright yellow noodles that is chewy and soft. This noodle is usually accompanied with tomato sauce which adds a sweet sugary flavour to the soft springy noodles, making you just want to slurp it in. Alongside the noodles, are some supple and sweet fishcakes and also the soft yet delightfully bouncy and juicy fishballs which are made freshly with sai toh fish, made from hand every morning to ensure its soft and tender. Occasionally, the noodles are accompanied with crispy bits of lard, which is a very important flavour component.

Fishball noodles

The smoky barbecue and aroma of peanut sauce wafted about in the evening air. The sizzling of the skewered meat and freshly cut onions sounded like music to my ears. It took every ounce of my self-control to hold myself back from stealing one of the mouth-watering, skewered grilled meat sitting above the barbecue grill. Diced up cucumber pieces were laid neatly in the corner of a paper plate, next to a scrumptious looking ketupat which looked as if it was inviting me to unwrap and devour it. Beads of sweat made their way down the sideburns of the middle-aged man behind the pit, as he skilfully fanned the hot charcoal beneath the grill. My vision was fixed on the various meats being skewered and laid overtop the burning hot grill, as I identified which one of them was mutton, chicken and beef. I watched in awe, oblivious to the fact that I was drooling from the corner of my lips, as the man prepared another plate of that savoury dish.

satay

The dough stretched larger and larger overtime until it became a thin layer. The dough puff out like a hot-air balloon under the heat of the intense fire. I stared with anticipation as the surface of the dough started turning crispy. The savoury aroma makes my mouth water and I just could not wait to wolf down on the delectable food!

- roti prata

I opened my mouth wide, letting the mountain of soft, fluffy rice balancing on my spoon to careen in. I could honestly eat this rice all by itself and enjoy it, but there’s more. Much, much more. After taking the scoop, my spoon flew towards fried cutlets of marinated chicken that was soaked in a special, sweet sauce. In one swift movement, my spoon cut a section off and threw the chicken in my mouth that was already salivating excessively. Firstly, the sauce. It spilled into my mouth and exploded with exquisite, almost indescribable tastes. Secondly, the chicken. The chicken had a rough, crunchy extra that when penetrated, oozed out with more sauce. The innards were soft, creating a balance between its rough exterior. Both sides of the coin colliding together to create a unique sense in my mouth. As the sauce was absorbed by the rice within my mouth while chewing, the chicken produced even more. After all the chewing was over, the tantalising mass within my mouth slid down my throat without resistance. I could still feel the texture as it slid down. Each bite I took to swallow that came after it was absolutely delectable. It’s something i’d call a piece of art

Pasty white noodles float around soup as bright as boiling lava. Slices of fishball, blocks of tofu and a handful of bean sprouts also swim around the delicacy. The spicy smell of the dish is enough to make you salivate. When you take a bite of it, a robust of flavours burst in your mouth, and an untollerable spiciness takes hostage of your mouth. Moreover, various textures swirl around your mouth; the silky smooth fishballs, crunchy bean sprouts and spongy tofu.

Laksa -.-

Thrown into the air and smacked against the surface of the counter, this dish is far from gentle. From the way its made to the way its presented. This dish can be eaten in various ways. Usually accompanied with an aromatic gravy, this dish offers a pack with fiery flavours that tingle your taste buds. Looking for something sweeter rather than savoury? Not to worry, this dish also goes well with the sweetness of sugar or smooth condensed milk. Experience the best of both worlds with this dish.

I closed my eyes in bliss as I marveled the sweet, sweet taste of the icy-cold dessert. The different flavours of syrup swirls in my mouth, leaving behind wonderful traces of fruity flavours for the pleasure of my tastebuds. The shaved ice crumbles down with every scoop, and the bright yellow corn placed on top of the desserts rolls down in such a graceful way, tempting me to pick up more and put it in my mouth. Underneath the iceberg of sweetened shaved ice, lies a sweet pool of rich soup. Generous pieces of jelly swims in the pool of heaven and the nutty taste of red bean overpowers the rest of the flavours in the most wonderful way. Now comes my favourite part - the sweet, fleshy palm seeds. It's like a treasure, only a few comes with every serving. Soon enough, I found myself finishing the heavenly dessert, only wishing for more.
