They are leaders.

It operates as a communion of autocephalous churches, each governed by its bishops in local synods.

Then the next layer is priests.
They are the ones that lead church.

And the last one (lowest one) is dikon which are helpers of priest and their duty is to hand things to priest that he needs.

There is a lot of iconography which are supposed to give respect to saints. A lot of orthodox churches don't have a lot of churches since they say that saints were standing while worshipping god. Orthodox priests can be married if they got married before they became a priest.
