Many times something we like or enjoy is not the same as someone else's, and vice versa. As a chef, we may love and be incredibly proud of a recipe or menu item, but it may not always sell well. So, how should we handle it if an employee or management (or the owner if it's not you) comes up and tells us to change the recipe or remove it completely?

Our boss decided he wanted a new way of creating butter blocks for croissants so it is consistent for all the bakers. A co-worker questioned his decision as it would take longer to do and she had been doing the same thing for 5+ years. This resulted in a back-and-forth argument of who was right and who was wrong.
