Fu Shin Street was formerly known as Taihe City. It was established by the "Tai Po Qiyue," one of the five leading families in the New Territories and the nearby villages. There were 28 shops comprising about 4 shops each when the Tang family's Tai Po Old Market in Putou initially opened, evenly placed on both sides of the street with 14 shops on each side and doors facing one another. The residents were the ones that used Taihe City the most at the time. The market has everything you need for your daily life, including clothes, food, oil, groceries, etc. There are public scales in the city, and the money taken in covers the costs of the offices.

A Hundred-year-old store on Fu Sin Street

The first hundred-year-old store to introduce is Lam Bo Shing (林寶盛). First of all, there is a very eye-catching signboard with red letters on a white background. There are three Chinese characters " Lam Bo Shing " written from right to left in the center. "Oil, sugar and groceries" (「油糖雜貨」) and "canned food and seafood"(「罐頭海味」) are written respectively, so in front of this store, you can know what the store sells at a glance.

Such a traditional signboard, the words on the signboard are written from left to right, and the style is very simple, which is very different from the signboards designed by modern people, so that people can know at a glance that this shop has a certain history.

The seafood and groceries in this old store are neatly arranged, and a lot of yellow lights are used for lighting, which further highlights that this store is very traditional, and the dark yellow lights bring an inexplicable sense of nostalgia.

There are basically only two people working in the store, and many of the customers who come to patronize are regular customers, and some regular customers even walk into the store, and then sit down directly to chat with the boss.

Ms Lam, the female proprietress has gray hair and looks a certain age, but she is still in good health. She can even lift a lot of heavy products.

There is a tin can for collecting money in the store. The tin can is rusty, but it can be seen that it is a tin can of Eagle Mark condensed milk. It has been around for many years. This tin can is used for putting money. Even though the store has been in business for over a hundred years, it still insists on collecting money manually, without using a machine, let alone any electronic payment. The reason is that the boss is not young anymore and doesn't know much about technology. She thinks it is too complicated to deal with these electronic things. Since there is no cash register or any electronic payment tools, each number is written by hand, and each number of the account book also needs to be calculated by themselves.

There is a couplet near the door: 「寶藏價格公平取 盛業宏開信義基」. This is a couplet that the current owner’s grandfather asked someone to mention. The name of the first owner (寶盛) was hidden, which can highlight the purpose of the store. Ms Lam finds a calligrapher to rewrite a pair of couplets every year and paste them during the Lunar New Year.

Chun Yeung Street ( Little 'Shanghai' or Little 'Fujian' because many refugees from these two places settle here)
-the historical background of Chun Yeung Street is rich. The name of the street is named after a sugar cane business man Mr Kwok Chun Yeung. He later became a real estate developer and invested a lot in the surrounding areas.
-the only market in Hong Kong where tram would ride through towards the North Point Terminus, which is similar to Maeklong Railway Market in Thailand. Originally, people just walk around in the market. However, when the tram is approaching, the people will slowly let their way out, which is an interesting scenario.
- Many residents and the owners of shops there are able to speak Fukien (or Hokkien) and Shanghainese dialects. They may communicate these two languages in the market. the bond between the consumers and the sellers are close.
-one side of the market sells dry stuff such as while another side of the market sells wet stuff like meat and vegetables

Fu Shin Street (富善街） is about 150 meters and not very long. It is one of the traditional markets in Hong Kong. This short street is full of old Tai Po old style, without being over-developed. It is very rare to find this kind of old market in Hong Kong, which is rapidly developing. Therefore, when we come here, we feel that we will pass through Going back in time and space to return to the simple and innocent sense of life in the past, you can also discover many old shops and even century-old brands! The "market" can reflect the daily needs of a person living in the community. This is the most authentic and authentic life experience. There are no check-in booths and eye-catching architectural designs. What is here is what Hong Kong already has. Very rare old style.

Taihe Market on Fushan Street used to be the largest market in the East of the New Territories. It is not to tease the old history. Fushan Street was called Taihe Market in the early days. It was built in 1892 (the eighteenth year of Guangxu), and there were 28 shops when it opened. , evenly distributed on both sides of the street, with 14 stores on each side, facing each other. (Now it has developed into more than 70 stores). After a hundred years, it is still one of the most prosperous places in Tai Po District. If you go to Tai Po, you can’t go there. Walking around Fushan Street, I really didn’t feel the real flavor of Tai Po.

There are all kinds of shops on Fushan Street, including grocery stores, fruit stores, daily necessities stores, noodle shops, vegetable markets, temples and bakeries, etc.

Fushan Street can be said to be a concentration of time-honored brands. Due to the development of globalization, many people say that there are fewer and fewer old shops in Hong Kong, and century-old shops are even rarer and extinct like dinosaurs. However, there are several hundred-year-old shops in Fushan Street, including "Lam Bo Shing “(林寶盛), "Foji Noodle Family"(佛記粉麵世家), "Ting Shun Hang"(天順行), "Zhongxing"(中興), "Tongren"(同仁)...too name but not few . In addition to the old stores, there are also several daily grocery stores here. In these daily grocery stores, you can also find many rare old-fashioned goods, such as fire water stoves and Hakka summer hats.

When we walk to the half of Fushan Street, we will see a temple in the middle, which is big and special. Because it is one of the few in Hong Kong that has such a formal temple in the vegetable market. It is not only a statutory monument, but also an ancient temple with a history of more than a hundred years

It has been more than a hundred years since Lam Bo Shing (林寶盛) opened, but now the third generation of owners are getting older and their physical strength is not as good as before, and their children feel that this business is very hard to keep and they are unwilling to take over. Therefore, this century-old shop may be close to the end in the near future.

There are many reasons for the reluctance to take over. The generation of the owner’s children is definitely better educated than the previous generations, and they are more capable of doing other jobs. It is definitely easier than guarding this old store.

But if no one is willing to take over this old store, there will be one less old store in Fu Sin Street, and there may be only some newer shops left. Over time, Fu Sin Street will become more and more popular. more modern.

In fact, Fu Sin Street is one of the existing markets in Hong Kong, and it can preserve most of the old shops. Therefore, in this small city, after more than 110 years of change, it can still retain a strong market. In the atmosphere of the city, in addition to the food and supplies needed for daily life, you can find many traditional goods, such as Hakka straw hats, fire water stoves, Hakka snacks, etc. Even if you find these things elsewhere, you may not have such a wide range.

Reflection from Fu Shin Street and the sustainable community policy of HK

Existing community networks and assets are suffering from destruction

In order to maintain sustainable community growth, community networks are essential. Residents can increase their capacity to address difficulties by strengthening them. Through regular communication and exchanges, a strong community network is created. Since most locals have lived there for a considerable amount of time, they have developed a sense of familiarity and community belonging. As a result, the networks are more crucial as resources for the community. However, the current local ties and social networks will disintegrate in the case of forced displacement for urban renewal. Preserving shared experiences within the community is essential for sustainable development and community building to maintain the original community network.

Small-scale economies break down within the street

In suburban areas, rent for small businesses is generally affordable. After the street is redeveloped or eliminated, it will be difficult for these stores to thrive, and the store owners and employees would lose their jobs, which might make the poverty issue much worse. In order to reach a consensus and protect the local way of life and economy while achieving sustainable growth, it is crucial to incorporate all stakeholders during the community development process fully.

A lack of bottom-up community participation

Hong Kong citizens have few opportunities to participate in community development under the current policy because the government develops large-scale building and community development initiatives using a top-down and economy-oriented strategy. As illustrated by the recent Tsoi Yuen Village and Express Train, this places affected persons and professions in a passive and disadvantageous position and gives the impression that the government is "steamrollering" people into its agenda, as the Fu Shin Street. The government's disregard for the original culture, way of life, and social network of the old community is a covert way of hastening the community's division and harmonisation.

Fail to protect the environment and preserve the culture

The government failed to tackle cultural preservation and environmental protection with appropriate consideration during the urban renewal project. Large, tall residential complexes and shopping centres are built during the rebuilding, with the improvement of air quality and the removal of pollutants taking a back seat. A glaring indicator is a rise in the number of buildings with folding screens. For instance, Fu Shin Street's historic bazaar is unlikely to be retained and may be replaced by huge shopping centres or apartments.

Field Site Relation to Sustainable Cities and Communities

Central Elevated Walkway
Since Central is the CBD of Hong Kong, it is a very busy place as people commute to the area from all around Hong Kong. This has attracted a lot of traffic in the district where a large amount of greenhouse gases is created through the burning of fossil fuel. Although the walkway only connects places inside Central, this still serves as a kind of sustainable transport as it encourages residents to travel inside the district as pedestrians. Minimize the use of road transportation. Also, The walkway also connects to the MTR station, which also makes public transport more accessible

Apart from a kind of sustainable transport, the walkway is also an inclusive pathway. From the site visit, we see that the landscape in the district is very hilly and contain a lot of stairs and steep slope, which may cause a problem for the elderly or the disabled. With the walkway, it is much easier for them to travel across the district.

PMQ, Tai Kwun
Although these places might give out a kind of tourist attraction feeling, they actually are the result of revitalization projects conducted through the collaboration of NGOs, the government, and the private sector. This kind of partnership between
different stakeholders can be seen as a way of promoting sustainable partnerships by stimulating the local economy.

Also, the revitalized area has offered a place for holding fairs and activities conducted by volunteers and small local businesses. During our visit, we saw a fair promoting handicrafts held by the community center in the district. Also, we saw a lot of small local businesses shops open in these locations, this provide an opportunity as a starting point for businesses

Central Market, The TreeHouse (Restaurant)
We come to visit Central Market in our visit, and we came across a shop that promotes the shopping habit of bringing your own container to shop. This is an attempt of promoting a sustainable lifestyle as it encourages buyers to reuse containers and avoid buying one-time plastic containers.

Meanwhile, the restaurant TreeHouse is actually a vegetarian restaurant that promotes a vegan diet. As meat production contributes a portion of greenhouse gases emission, the promotion of shifting to a vegan diet can encourage people to shift their diet to become more sustainable. Outside the restaurant, a food waste recycling bin is set up by the shop. This is an interesting action to promote recycling food waste, which government miss out on such recycling schemes until recent years

These are some of the ideas we have in mind now. Please take a look at whether we are in the right direction

The attention the CEDD (Civil Engineering and Development Department) has about the human co-existence with marine organisms on this beach

make it valuable to be included in our sharing, supporting a wider dimension of Ting Kok. It helps show Ting Kok's great diversity as a local area, with a variety of elements such as agriculture/land use/water use/living species.

The degree of cultures (Hillary)

· The internal cultures of Sha Tau Kok and Mui Tsz Lam are completely dissimilar. People labor for the primary stage of jobs like planting and providing basic services like starting a restaurant inside the villages in the remote two places in Hongkong. The culture inside the village is relatively natural and native. The majority of the population in Sha Tau Kok and Mui Tsz Lam is between the ages of 35 and 60, and wearing clothing is a fundamental need rather than a demand. The majority of villagers communicate in Cantonese, making it a comparatively unique language and communication method.

· Contrast this with central, which, as we all know, is regarded as an economic hub in Hong Kong, where people work in a variety of jobs ranging from second to third-stage, primarily in the service of large corporations. Younger people make up the majority of the population in central, but some immigrants like foreigners also reside there. Since people don designer or luxury clothing everywhere, central fashion is much higher in advance. English and Cantonese are the two languages used for converting the most frequently. People in villages generally have a relatively regular sleeping and working schedule, which makes the stay-up culture of the central region fascinating when compared to Mui Tsz Lam. However, since many of the employees work into the wee hours of the morning and prepare for work in the early morning, central has a relatively sporadic wake-up time

The degree of environment (Danny)

· Sha Tau Kok has a relatively more natural environment. The village is spread among the mountains. The villagers rely on the advantages of the local natural environment to develop terraces and adopt the traditional farming methods of early China to grow crops. At the same time, they keep some cattle or poultry. The villagers have wisely used local plants to create their own delicious food, like steamed bun(茶果). When promoting Lai Chi Wo and Mui Tsz Lam, people can learn about the history of the local Hakka people and realize the importance of environmental protection. However, compared with Central, Sha Tau Kok lacks some of the elements of a modern city, which has caused some inconvenience to the villagers. Most of the buildings in Sha Tau Kok, for example, are so old that some may be at risk of collapse.

· The Central elevator walkway is built between tall buildings, which makes it difficult to see a large amount of green belt. The most seen animals are wild pigeons in the streets or on the eaves. The large pigeon population has also caused problems for citizens, such as increasing the workload of road cleaners due to pigeon droppings. Some restaurants in the surrounding area leave garbage on the curb for days. Over time, the garbage tends to stink and grow bacteria.

The degree of transportation (Tina)

· Central

1. How to connect to other areas: There are three MTR stations in Central: Admiralty Station, Central Station, and Hong Kong Station; an Airport Express station connecting the airport to Asia Expo Centre; 10 piers connecting Tsim Sha Tsui, Cheung Chau, Mei Wo, and Lamma Island; twin-track trams running east and west of Hong Kong Island; and buses and taxis to and from each district.

2. Traffic patterns in Central: To ease traffic from the Mid-Levels to the business district, the Government has built the Mid-Levels Lift connecting north and south, and the escalator from Central Market to Hollywood Road is built on an elevated walkway to separate traffic and people.

3. Advantages: Convenient transportation will attract more talent and tourists, and facilitate the region to make better use of local resources for development. The escalator has become a tourist attraction, driving the surrounding businesses.

Disadvantages: It is not suitable for the disabled; the ceiling of the mid-level escalator attracts feral pigeons, which affects hygiene level; the traffic flow between the Mid-level and business district does not significantly reduce; the Mid-level elevator introduces business but also intrudes into the residential area, reducing the leisure space of residents; the elevated walkway blocks the sky and devalue low-rise buildings.

· Hing Chun Yeuk

1. How to connect to other areas:

(1) Departure from Ma Liu Shui Pier by Boat to Lai Chi Wo (only Saturday and Sunday)

(2) Mountain road(about eight kilometers)

(3) Enter Sha Tau Kok using a permit (villager must guarantee) and take a boat from Sha Tau Kok to Hing Chun Yeuk

2. Problems:

Hing Chun Yeuk is connected to other places by mountain roads and waterways, so the traffic is inconvenient. Because it is connected to Shenzhen, the traffic is limited, and the mountainous terrain is difficult to build roads.

Traffic patterns in Hing Chun Yeuk: Villages are connected by water or mountain roads.

How to apply Giddens’ theory:

In pre-modern times, localized relations organized in terms of place are important and always provided a familiar milieu, those local communities always have lower spatial span and less mobile populations compared to the modern communities. But some characteristics of the local communities in pre-modern times have been dissolved by time-space distanciation and disembedding.

More convenient transportation facilitates the flow of various resources and cultures, strengthens the degree of connectivity between a single place and other places, and also promotes the distanciation of time and space, making the area more dynamic and efficient.

The degree of economy (Roy)

· Central

Central is considered to be the economic hub of Hong Kong, a major financial center and hub for international trade and commerce. This means that the infrastructures are well developed and due to the majority of cooperates located in central being tertiary industry instead of secondary industry relates to actual manufacturing, achieving sustainable development is tend to be easier.

From what we observed and researched, the Central district has a well-developed public transportation system, including buses and undergrounds. From the news, Hong Kong is now introducing hybrid/electric buses and taxis to further reduce carbon emissions. Apart from that, the Central district also has an infrastructural elevated walkway system that nearly connects everywhere essential for the public. And according to the research online, the government also launched initiatives to promote walking and cycling. According to our observation, a number of people now more preferred to commute via the walkway systems.

However, we also discovered many drawbacks. First up is waste recycling, we go through both walkways and streets and discovered some waste was placed at the corner instead of being properly through to trash bins and recycled. The recycling infrastructures are lack compare to the number of people and shops in the Central district. Then is the air pollution issue. Due to the congested traffic and a large number of private cars, vehicles produce huge amounts of emissions in the Central area. Although elevated walkways could make us and other pedestrians lifted by cars, the emissions are actually still produced by them.

Last but not least, is high-density urbanization. The high-rise buildings and skyscrapers, and dense populations, not only intrude into the public spaces which may be caused privacy concerns but also leads to the urban heat island effect. The somatic temperature is significantly higher especially compared to Victoria Harbour that we also experienced when back in Kowloon.

Overall, while Central is making progress towards sustainable development, and also has advanced fundamentals, there are still several areas where improvement is needed, particularly in waste management and vehicle emissions.

· Lai Chi Wo and Mui Tsz Lam

Lai Chi Wo and Mui Tsz Lam are Hakka villages near Sha Tau Kok, in the northeastern New Territories of Hong Kong SAR. Both villages are hundreds of years old and were nearly deserted decades ago, but the descendants of the villages have returned to them. Guided by the United Nations Sustainable Development Goals, they are exploring how these two villages, which are typical of Chinese remote areas, can be developed while preserving their traditional culture.

In terms of our field trip and research in the field sites, the two villages have partly continued the tradition of self-sufficiency in their business models, including planting fruit trees according to local conditions, returning abandoned farmland to farming and other measures, and even small-scale grazing. On the way, We saw something that is hard to see in Hong Kong. Domestic cattle. However, with the advent of modernization, the business model has also undergone certain changes. From doing business in the former Dung Ho Hui to selling local products at the entrance of the village, and with the popularization of modern transportation to a certain extent, the two villages have gradually In developed tourism, including restaurants and story rooms, and so on.

However, in order to avoid over-commercialization and marketization and go against the goal of sustainable development, preserve traditions, and continue to explore the direction of sustainable development, the two villages have cooperated with social organizations such as universities and NGOs, such as the agricultural project with the University of Hong Kong, and with Architectural projects jointly undertaken by CUHK. These projects explore how to develop the direction of the economy under the premise of sustainable development and preservation of tradition.

But in terms of economic development, the biggest problem facing the two villages is transportation. Public transportation only departs at 9:00 am and returns at 3:30 pm, and only ships can transport large equipment and raw materials that are not available locally. Other modes of transportation are either packing a speedboat by yourself or walking for several hours, which is very inconvenient. Not only is transportation with the outside world inconvenient, but the transportation between the villages has just improved in recent years. Before the cement plank road was built, the roads between the villages were dirt roads, and they turned into dirt roads when it rained. Even though the concrete plank road is now built, we have not observed too much engineering equipment, such as tractors or transport motorcycles, etc. This may be because the village must maintain traditions, but it does slow down the possible economic growth speed.

Mr Chu, I would like to ask you a few questions on the field report.

Firstly, in terms of the outline of the report, although you have mentioned that there could be flexibility upon them, may I know if it is a must to apply the concepts in 1.2.1 in 1.2.3? Since the main references I adopted are written before going to the field site, I think there could be a better reference to explain my understanding my chosen field site. If that's the case, do I need to rewrite the entire part in 1.2.1?

Thank you for your time and attention.
