The pedestrian senses danger by simply seeing the car coming. This visual information is processed by the brain and sent to the nervous system. The nervous system responds near-instantly and sends instructions to the muscles, so the man can move out of the way.

The fight or flight response comes from the systemic part of the nervous system. The hypothalamus, which is located in the brain, sends a signal to the adrenal gland. The adrenal gland discharges a rush of a chemical called epinephrine. Epinephrine then flows through the body and prepares each part to act, whether that act be fighting or fleeing. It binds to the surfaces of organs rather than entering into them.

Epinephrine goes to the heart to increase heart beat rate, the lungs to increase breathing rate, the liver to produce glucose for extra energy, the eyes to cause them to dilate and the digestive system/stomach to inhibit digestion.
