Early on in the series we meet Agatha who you quickly notice isn't a traditional nun. She is a badass woman and does whatever she wants to do. During her questioning of Jonathan at the church we sense she is an intelligent, humorous, strong-willed and brave person. Even though Agatha is a nun, she is in the first episode an atheist. She tells Jonathan that she has looked for God everywhere, but never found him when she needed him. This explains her way of being untraditional and more natural. As the audience you feel connected to her, due to her warmness and humor. If she were a traditional nun it would be harder for the audience to connect with her and root for her.

Her surname is the famous Van Helsing, which refers to Abraham Van Helsing, who was a vampire hunter and appeared in the first Dracula novel. Abraham Van Helsing is in the novel Dracula's nemesis, which Agatha also is in the series though this time with a flirty twist.

While others fear Dracula and do nothing but pray for God's help, she is instead trying to solve the mystery around him and find a way to stop him completely. In every movie about Dracula no one stops to think: "Why can't he enter a home without an invitation? Why can't he be in daylight and why can't he bear the sight of the cross?", but instead finds creative ways to stop him that in the end doesn't work long-term. She is the first character ever to question the origins of his mysterious actions.

Agatha From the 2020 Netflix show standing up against Dracula:

We are meet by Count Dracula, when the young lawyer Jonathan is send to his castle to arrange some paperwork. Dracula is very old, and speaks broken english. Throughout the series his portration changes, which is because he gains the skills that his victims possessed. He drinks the blood from the young Jonathan, which means that he gains his skills. His english and social skills envolves. He is now portrayed as a charming middle aged man, which is not what you would associate with a vampire.

In the series Dracula is portrayed as being more flirty than other movie adaptations of him. It is easy for him to attract his “meals”, both younger and older and as a viewer you find him entertaining. He uses his attitude, charm and manipulation to attract his victims. This is very different from the original novel from 1897, where Count Dracula is portrayed rather different: "When Harker meets Dracula, he acknowledges that the man is pale, gaunt, and strange".
https://www.britannica.com/topic/Dracula-novel

The portration of Count Dracula from the 2020 Netflix show:

The relationship between Count Dracula and sister Agatha is rocky. They meet at the church when Dracula tries to gain acces. Dracula is quickly fascinated by her mortal strength, fearlessness and intelligence as they meet for the first time. Already it feels like she knows a lot about him from her analysis from Jonathan.

Agatha gives him a knife with her blood on and by licking her blood Dracula also begins to gain information about her. He gets obsessed with her and kills all the nuns to get acces to her, once he is inside the church. Agatha asks him to let Mia, Jonathan's fiance, go which he obliges. This is his way of showing his rather disturbed feelings by sparing the life of someone innocent simply because Agatha wants it.

This is the start of their cat after mouse type of relationship. Agatha is in fact a serious threat to Dracula and there are many times where he could simply kill her and eliminate the threat she is, but he chooses to keep her alive. He says: " I will make you last" to her when he drinks her blood for the first time. They play mindgames with each other and both seem to actually enjoy it. Later on, their relationship shift and it does in fact actually turn to love.
