Worker bees sip nectar from flowers and temporarily carry it in their honey stomach, where enzymes in their stomach mix with the nectar and breaks it down into fructose and glucose. They take it back to the hive where it is stored in honeycombs. The water in the nectar evaporates until 81% of the water is gone, leaving a substance that we call honey. Beekeepers place a sheet of wax called comb foundation on the sides of a beehive that is the same shape as the bottom of honey combs. Bees will use these as guides to build honeycombs. Honey is stored in these honeycombs. They are moved to the top of the hive until they are totally filled with honey, and then removed and replaced with new/recycled ones.

Bees are important to flowers and other plants because they carry pollen from the male part of a flower (the anthers) to another flower’s female part (the stigmas). 80% to 85% of all crop pollination in the United States is done by bees. A worker bee goes to about 10,000 flowers in one day. Certain flowers are made to be pollinated by certain animals or things like wind or rain. Flowers that were designed to be pollinated by bees are usually yellow, blue, magenta, or white. Apples, avocados, blueberries, cherries, cranberries, sunflowers, cucumbers, kiwi fruit, melons and vegetables are very dependent on honey bees to pollinate them.

A beekeeper's job is to raise the bees and make sure they have a good environment to make honey. The beekeeper wears a bee veil made of wire cloth and gloves to protect them from getting stung. Eventually, the keeper become immune and not swell up when stung. When working in the hive, smoke is blown over the entrance of the comb to put the bees into a peaceful and quiet state, so that they won’t attack. To get the honey, the keeper must take out the filled honey combs, shave off the top of the honeycombs with a specially designed knife, and then extract the liquid honey by spinning at high speeds using centrifugal force. They then have to either place a new comb foundation or reuse old honeycombs.

To be considered a commercial beekeeper, you have to be running 300+ hives. In 2013, North Dakota was the number one honey producing state. About 1/2 of the honey is sold through retail channels, the other 1/2 in bulk or to the food industry. Bees and other insets are very important to keeping s healthy. ⅓ of the human diet comes from plants that were insect-pollinated. One plant the is depending a lot on bees is the almonds. 1,000,000 honey bee colonies are needed to pollinate California’s almond crop, which is 80% of the world's almonds. Without bees, and our bee industry, we would have no honey, flowers, fruit, veggies, beeswax, propolis, and royal jelly.

On page 89, it states, "I stick the fine bristles of my paintbrush into the flower. Tiny, pale grains of dust cling to it-pollen. I move to the next flower and do the same, brushing the dust from the first flower into the second, while taking dust from the second to place in the third."
