“I am eager to learn all the knowledge this prestigious University and bachelor's degree program has to offer”.

The words "eager", "prestigious" I would not normally use unless it's in an academic setting.

“Happy new year, Head out to NY tomorrow morning, Can't wait to be back home”. Non-academic writing, I use shorter sentences and a less professional writing style, I write more freely, no structure.

Simple words that are easier to read and understand.

Also in academic texts, I am more direct answering someone’s question or voicing my opinion.

“Ideas, thoughts, background make great writing pieces”, “Writing shouldn’t be a set structure or way you write”.

Similarities I see are that In my writing pieces I tend to use a personal engagement to better connect with my audience.

Academic piece: “ My military background, passion for sports, and drive to help others would be the perfect contributions to the campus lifestyle”.

Non Academic piece: “That sounds great, I’ve played sports my whole life”. This is an example of me trying to relate to the person that I am talking to by engaging something personal about myself.
