Why would an author choose to write multiple storylines and jump around in time? Can you think of any books/films/tv shows that make use of this technique?

"Some series follow a linear timeline such as The Wheel of Time.Others jump around dozens of years like The Riftwar Cycle. Some authors jump back to write tales in the past like A Song of Ice and Fire.Discworld is the most complicated I can think of with various stories and characters interconnections. Are you a vanilla linear reader? Do you prefer publication order or chronological reading? Is there a release order that you haven't seen but would like to?One I don't think would be possible but I would love to see attempted is a 5 book series with 2 in the past, 2 in the future, and 1 in the big climax in the middle. Chronologically organized 1-5, but published 1, 5, 2, 4, 3 as the story converges to the center point."
